Add little oil in a pan and fry onions till they turn soft. Add ginger-garlic pieces and tomatoes.

Cook for a while till all ingredients are cooked. Off the flame and transfer to a plate, let them cool.

If you have already boiled eggs, remove the shell and pierce them with a knife or a fork.

With leftover little oil in the pan put eggs, sprinkle salt, turmeric powder and red chilli powder. Fry for a while and transfer to plate and keep aside.

Put tomato-onion mix in a mixer grinder and grind for one round. Put little water and grind further to get a soft paste.

Add little oil in a pan and add cinnamon sticks, bay leaves, cumin seeds, salt, turmeric powder, green cardamoms, red chilli powder and tomato paste.

Mix all ingredients and cook for a minute with the lid covered on a low flame.

Put curd for additional flavour, add 2 cups of water and boil to get a thick gravy.

Add fried eggs and cook for 2-3 minutes by closing with a lid.

Garnish with slit green chillies and coriander leaves. Serve simple egg curry recipe hot.
