Ingredients
  • 2 cups Toor dal
  • Water – required quantity
  • tbsp. Turmeric powder
  • 1 tbsp. Oil
  • 2 tbsp. Ghee
  • 2 tbsp. Garlic finely sliced
  • 1 tbsp. Ginger finely sliced
  • 2 tbsp. Curry leaves
  • ½ Large bowl Onions
  • 2 tbsp. Green chillies
  • tbsp. Salt
  • 1 Large bowl Tomatoes
  • 1 tbsp. Red chilli powder
  • 1 tbsp. Coriander powder
  • ¾ tbsp. Garam masala powder
  • ½ tbsp. Mustard seeds
  • ½ tbsp. Cumin seeds
  • 4 No. Dry red chillies
  • Asafetida – a pinch
Instructions
  1. Wash Toor dal and transfer to the pressure cooker.
  2. Put 1 tbsp. oil, little turmeric powder and 500 ml. water. Usually, we add 2 cups of water for 1 cup dal.
  3. Cook dal on medium heat for 3 whistle blows so that dal becomes soft.
  4. While dal is being cooked, let us prepare spice mixture.
  5. Put ghee in a pan, when it melts add finely sliced ginger, garlic, green chillies, onions, a little salt and curry leaves.
  6. Add sliced tomatoes and cook open or closed with a lid till they turn soft.
  7. Sprinkle salt, turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.
  8. By this time, dal might be ready to add into the spice mix.
  9. Before adding dal check dal whether it is cooked well or not, if not mash dal to make it soft.
  10. Add dal to onion-tomato mixture and cook at low temperature.
  11. Tip: Check the taste of the dal, if needed add a little salt as per your taste.

  12. While toor dal is being cooked, let us prepare tadka or temper.
  13. Add ghee in a pan, when it melts add cumin seeds, mustard seeds, curry leaves, dry red chillies and asafetida powder.
  14. Mix all ingredients and pour temper to dal and mix well.
  15. Dal Tadka Recipe Dhaba Style is ready, garnish with coriander leaves.
