Easy Vermicelli Upma Recipe: Semiya Upma Recipe Indian Style

When it comes to the upma recipe, we are all familiar with rava or poha. When we talk about vermicelli, we are familiar with Kheer. But this version is not only colorful but tasty.
If we are making at home then Bambino or MTR brands are good to make this recipe as they get cooked perfectly with the right amount of water.
Have you ever tried eating Vermicelli Upma Recipe on the street side? They don’t make use of branded they try to save money by purchasing loose Vermicelli. To make them they sprinkle a few spices to get flavour.
When using branded or un-branded it’s a good idea to fry them with ghee or oil to make them non-sticky. Based on the variant (thin or thick) adding the right proportion of water depends.
Although I have not mentioned it in our recipe, adding rava along with vermicelli gives good flavour apart from making it non-sticky.
Making Upma recipe is one of the simple recipes which can be done by bachelors. People used to add vegetables to make nutritional but nowadays people have become health conscious and try to make this recipe by substituting with oats, millets, or broken wheat.
We can make this recipe in two variations. One is by adding onions, dals to give a crunchy flavour and if needed sprinkle a few drops of lemon extract. Another version is to add your choice of vegetables (either by boiling separately or adding directly by chopping to fine pieces).
Furthermore, people also add garam masala or special spices to enhance their flavour apart from tomatoes and vegetables.
TIPS to make the perfect Vermicelli Upma Recipe:
- Roasting Vermicelli with ghee will not only enhance flavour but also makes it non-sticky.
- Adding a generous quantity of peanuts and cashews and other nutty spices makes it crunchy.
- Based on the quality of vermicelli, the water ratio varies. We have used Bambino Brand so added a 1:2 ratio.
- Adding ghee at the end of the recipe will make vermicelli non-sticky.
- If you feel semiya is cooked and there is still water, remove the lid and cook at high flame.
- We can even add other veggies like potatoes, beans, peas, etc to make upma nutritious.
- When extra vegetables are added we need to add extra salt.
- We can cook vegetables separately and add them to upma or slice them to fine and add directly.

Ingredients
- Vermicelli – 1 bowl
- Ghee – 3 tbsp.
- Oil – 4 tbsp.
- Chana dal – 1 tbsp.
- Moong dal – 1 tbsp.
- Peanuts – 3 tbsp.
- Mustard seeds – ¼ tbsp.
- Cumin seeds – ¼ tbsp.
- Cashew – 3 tbsp.
- Onions – 1 cup
- Green chillies – 4 No.
- Carrot – 1 bowl sliced into fine pieces
- Curry leaves – 2 tbsp.
- Tomatoes – 1 cup
- Salt – 1 ½ tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- Roast vermicelli by adding little ghee in a pan. Once they turn golden brown, keep aside.
- Heat little oil in a pan and add peanuts, chana dal, moong dal and fry for a second.
- Add cumin seeds, cashew, mustard seeds, green chillies and then onions.
- Now we can add finely sliced veggies like beans, carrots, green peas etc. at this point.
- We have added only finely sliced carrots and tomatoes.
- Sprinkle a little salt and cook on low flame till veggies are cooked.
- As we have added 1 bowl semiya add two bowls of water and boil by covering with a lid.
- When we add more veggies we need to adjust salt so check the water for salinity and add salt as per your taste.
- Add vermicelli and cook till they are cooked by covering a lid on a pan.
- If you feel Semiya Upma Recipe is sticky, add a spoon of ghee and mix well.
- Put coriander leaves and mix well. Vermicelli Upma Recipe tastes good when hot.

How to make Vermicelli Upma Recipe:
1. Heat 2 tbsp. ghee in a pan and add vermicelli. Roast them till they turn golden brown. Transfer to another bowl.
2. In the same pan, add oil, chana dal, moong dal and peanuts. Roast for a while.
3. Add mustard seeds, cumin seeds, cashews and onions.
4. Continue adding green chillies, finely chopped carrots, curry leaves and tomatoes.
5. Sprinkle salt and mix well. Cook for 2 minutes so that carrots and tomatoes turn soft.
6. For each bowl of vermicelli add two bowls of water and bring it to a boil with the lid covered.
7. At this point of time check the salinity of the water and adjust by adding the required salt. To me, I felt like adding ½ tbsp. as per my taste.
8. Add the roasted vermicelli and cook for 5 minutes with the lid covered.
9. At the end of the recipe add a spoon of ghee and coriander leaves and mix well.
10. Serve Vermicelli Upma or Semiya Upma Recipe hot.
