- We can substitute with sunflower oil instead of ghee.
- As per the geographical location and season, we can add available veggies to this recipe.
- At the time of this recipe, I didn’t get spring onions, if you find them add them, it gives you great flavor.
- I didn’t boil vegetables before, so I have to cook with the lid covered for 2 minutes.
- If you want granules of rice, we need to either remove starch or add little oil while cooking rice.
- When using biryani rice then remove starch and add 1 tbsp. oil to get grainy rice.
- Adding tasting salt is optional, adding it gives you good flavor but is not good for health.
- This version of the recipe is mild in spice and healthy if you want you can add garam Masala powder to increase the spiciness.
- Adding more than 1 tbsp. soya sauce may make this recipe look black.
- If you do not have vinegar, add lemon as a substitute.
- Adding onion grass will enhance the flavor of any kind of fried rice.

Ingredients
- Rice – 1 bowl
- Ghee – 1 tbsp.
- Garlic – 1 tbsp. finely chopped
- Green chillies – 1 tbsp. finely chopped
- Carrot – 1 cup sliced into thin slices
- French Beans – 1 cup finely chopped
- Capsicum – 1 cup sliced into thin slices
- Salt – ½ tbsp.
- Black pepper powder – ½ tbsp.
- Soya sauce – 1 tbsp.
- Chilli sauce – 1 tbsp.
- Vinegar – 1 tbsp.
- Onion slices to garnish
Instructions
- First prepare veggies, finely mince garlic cloves, cut green chillies and French beans into small pieces. Slice carrots and capsicum into thin and long slices.
- Heat oil or ghee in a pan and fry garlic, French beans, green chillies, carrot, French beans and capsicum.
- Sprinkle little salt and mix. As these veggies are not boil cooked, let’s cook for 2 minutes with lid covered.
- If you are cooking rice fresh, then add little oil while cooking and initiate cooking rice in the first phase.
- Once rice is cooled, add little salt in rice and transfer to another bowl.
- Add this rice to veggies and sprinkle black pepper powder and mix rice.
- Put soya sauce, vinegar and chilli sauce. Mix well with high flame and cook for a minute.
Sprinkle coriander leaves and serve vegetable fried rice recipe hot accompanied with onion pieces.

How to make Vegetable Fried Rice Recipe:
1. Heat ghee in a pan and add finely chopped garlic and green chillies. Add thin slices of carrot.
2. Add finely sliced French beans, thin pieces of capsicum and a little salt. Mix well and cook for 2 minutes with lid covered.
3. Cook rice separately or if you already have cooked rice, rice granules with hands and add a little salt as per your taste.
4. Add black pepper powder, soya sauce, chilli sauce and vinegar.
5. Garnish vegetable fried rice recipe with coriander leaves and thin slices of onion pieces while serving.
