Easy Uttapam Recipe with Suji Rava: Soft, Crisp Suji Uttapam

The Uttapam Recipe is one of the protein-packed thick base dosa made with urad dal and topped with onions, spices and tomatoes.

Suji Uttapam is one of the staple foods of South Indians as it not only tastes great when accompanied with chutney or sambar but also fulfills their breakfast need.

Instead of making this whole process fresh usually, we make this recipe with leftover idli batter so this recipe is sour in taste.

As said above few people like to top tomatoes and few like to skip them as they increase the sourness of this recipe. But when accompanied with coconut chutney its taste is balanced and gives a good feel.

Is sooji uttapam recipe healthy?

This healthy dish may be semolina uttapam made from nutrient-rich ingredients. Being a low-fat food, it may well become a reliable source of energy and predominantly a complex carbohydrate dish. Sooji consists of high protein, fiber, and many needed minerals such as iron and magnesium. Nutritional value becomes enhanced as vegetables like onions, tomatoes, and carrots are included in it because of added fiber, vitamins, and antioxidants. However, this must be taken in moderate amounts as over-intake usually causes high levels of blood sugar in most of the people. uttapam recipe can contribute to its nutritious value as it can be prepared using the smallest amount possible during the time of cooking contributes to making it a healthy meal in general.

TIPS to make perfect Uttapam Recipe:

  • If using whole urad dal you need to clean it well until its skin gets peeled off.
  • If you are using poha then we need to add them to urad dal and soak them along with it.
  • Clean idli Rava so that there are no insects or foreign materials.
  • Make sure the batter is not runny, it should have a bit of thick concentration.
  • Add a little dal as per your jar size and make sure the batter doesn’t get hot while grinding.
  • To ferment properly we need to maintain room temperature during summers and maintain a little warm during the winter season.
  • During the fermentation process, the batter may swell and come out of the vessel so it’s a good idea to have space between the rim of the vessel and the batter.
  • We can add rock salt or iodized salt to the batter either before fermentation or after.
  • To have a great taste either put ghee to the suji Uttapam Recipe or put a little butter before putting the batter on the pan.

Easy Uttapam Recipe with Suji Rava

Ingredients

  • Urad dal Minapappu – 1 Glass
  • Idli rava/ rice – 2 Glasses
  • Rock salt/ non-iodised salt – required amount
  • Water – required amount
  • Cumin seeds – 1 tbsp.
  • Onions – 2 tbsp.
  • Tomatoes – 2 tbsp.
  • Finely sliced green chillies – 1 tbsp.

Instructions

  1. Clean urad dal and put them in a bowl. Add water and soak for 4-6 hrs.
  2. For each bowl of dal add 2 glass full idli rava. Soak rava along with dal for 4-6 hours.
  3. Once soaked, clean dal and grind to make a soft paste. If needed add little water to make soft.
  4. Transfer batter to another bowl and at the same time squeeze water and add rava to batter.
  5. Mix and beat the batter for a while before fermentation so that batter swells and become soft and puffy.
  6. Close the vessel with a lid and keep aside (overnight) at room temperature to ferment.
  7. Take a small quantity of batter required to make Uthappam recipe and add a little salt as per taste.
  8. Put dosa pan and add little oil and put a small portion of batter and spread to get a thick base.
  9. Lower the flame and sprinkle cumin seeds, green chillies, onions and tomatoes.
  10. We can even add grated carrot and put ghee over batter so that we can cook and give crispy bottom.
  11. Once the topping is done, close the pan with a lid and let it cook slowly so that it cooks as well as give Utappam Recipe a good taste.

How to make Uttapam Recipe:

1.  Put 1 glass urad dal in a bowl and add adequate water and soak for 4-6 hours.

2.  Measure 2 glass full idli rava and add required water to soak along with dal.

3.  Put soaked dal to grinder, if needed add little water to make grinding easy.

4.  Once dal is a grind to a soft paste, transfer batter to another vessel.

5.  At the same time squeeze rava with hands to remove excess water. Put rava in the batter.

6.  Mix both batter and rava. Beat batter with hand or hand blender for a minute so that we get soft and puffy output.

7.  Put a lid and keep aside (overnight) to ferment at room temperature.

8.  Take required quantity of batter in a bowl and add a little salt.

9.  Heat dosa pan and put little oil and put 2 spoons of batter and spread in circular shape with a thick base.

10.  Sprinkle cumin seeds, finely sliced onions, green chillies and tomatoes.

11.  Close the pan with a lid and cook on low flame till you get golden crust at the bottom.

Close the pan with lid to make uthappam.

12.  Do not flip the Suji Uttapam Recipe, serve hot either directly or with any chutney.
