While making this recipe we can cook the rice separately or simply use leftover cooked rice and mix it with tomato bath spice.
We find different styles of making this recipe and people mix different spices to make this recipe delicious. Our version of the recipe is made by mixing sambar powder which my children like to eat.
When this recipe is made for lunch box, I cook the rice separately and when eaten instantly we can use leftover rice. Rice tends to become sticky if cooked rice is left at room temperature after 4-6 hours.
Usually, the Tomato rice recipe is a bit spicy so when we are serving this recipe to our children it’s a good idea to mix yoghurt-based raita as it suppresses spiciness.
TIPS to make perfect Tomato Rice Recipe:
- Usually, we use rice:water=1:2 proportion but to obtain grainy cooked rice, we need to reduce little water.
- We can even add little oil while cooking rice to get non-sticky rice.
- Ripe tomatoes give good taste to our recipe.
- Adding sambar powder not only elevates flavor but also the texture of this recipe.
- If tomato rice becomes spicy, we can add little ghee and mix well.
- Based on the quantity of rice, we need to adjust the number of tomatoes.
- If we transfer cooked rice immediately to a wide vessel, rice not only becomes non-sticky but also helps in cooling.

Ingredients
- Tomatoes – 1 bowl. 4 Large sizes
- Rice – 1 bowl 250 gms.
- Water – required qty.
- Oil – 7 tbsp.
- Mustard seeds – ¼ tbsp.
- Cumin seeds – ½ tbsp.
- Curry leaves – 2 tbsp.
- Green chillies – 2 No.
- Onions – ½ bowl. 2 Large sizes
- Ginger garlic paste – 1 ½ tbsp.
- Salt – 2 tbsp.
- Turmeric powder – ¼ tbsp.
- Sambar powder – 2 tbsp.
Instructions
- While making this recipe we can use either previously cooked rice or instantly cooked rice.
- As I am not left with any rice, I am cooking fresh rice.
- Clean rice and put it in a rice cooker add water to it at ratio rice:water=1:2 (based on the age of rice).
- Note: If rice is not older than 2 years then we need to decrease water or else rice grains may be sticky.
- Once the rice is done, transfer it to another wide vessel and let it cool to get non-sticky grains.
- Heat oil in a pan, add cumin seeds, mustard seeds, green chillies, curry leaves and mix well.
- Add finely chopped onions and cook them on medium flame till they turn soft.
- Put ginger garlic paste and stir till its raw flavour is cooked.
- Add tomatoes, turmeric powder, and salt. Cook for 5 minutes with lid covered till tomatoes turn soft.
- Sprinkle sambar powder and mix well.
- Add rice and mix gently, add coriander leaves and mix well.
- Garnish Tomato Rice Recipe with coriander leaves accompanied by yoghurt-based salad.

How to make Tomato Rice Recipe:
1. First, let’s cook rice, when rice is being cooked we can prepare ingredients. Add rice to a bowl and pour water, clean and drain starch, and dust particles.
2. Pour 2 bowls of water for 1 bowl of rice at a ratio rice:water=1:2.
3. Once the rice is cooked, transfer the rice to a wide bowl, spread, and cool.
4. In a pan add oil, mustard seeds, cumin seeds, and curry leaves.
5. Add finely sliced green chillies and sauté for a while.
6. Slice onions into medium size and add them, cook on medium flame.
7. When onions turn soft add ginger garlic paste and sauté till its raw flavor is cooked.
8. Add tomatoes, salt and turmeric powder, mix well and cook further with the lid covered.
9. Cook tomatoes for 5 minutes so that they become soft. Open the lid and stir once.
10. Add sambar powder and mix well. Sambar powder not only gives a good texture but also elevates the taste of tomato rice recipe.
11. While the tomato mix is cooking at a low temperature, add rice, and mix well.
12. When rice is cooled we get grainy rice, so when mixed well with tomato mix you get a grainy texture.
13. Garnish Tomato Rice recipe with coriander leaves and serve hot with any salad.
