Thotakura Tomato Curry | Amaranth Leaf Curry for Weight Loss
Thotakura Tomato Curry is one of the healthy recipes from Andhra Cuisine. It is loaded with essential vitamins, iron and nutrients.
Usually, Amaranth leaves are found in tropical climates and are green, gold, red, or purple. Colour varies with soil and climate.
This leafy vegetable is low in calories and high in fiber so people who are suffering from diabetes and heart problems must have this recipe at least once a week.
People who are serious about losing weight should eat Amaranth Leaf Curry as this will reduce appetite and thus increase weight loss.
We can cook this recipe in a pressure cooker but the output may be mushy so that option best suits when we add dal. As our version is curry we have added tomatoes and added few spices to taste.
TIPS to make perfect Thotakura Tomato Curry:
- Always leafy vegetables must be washed in water to remove chemicals or foreign particles.
- We should not wash leafy vegetables once they are sliced as we may wash micronutrients.
- It’s a good idea to put tomatoes only when the thotakura is half-cooked.
- We need not add water to amaranth leaves as it releases water while cooking.

Ingredients
- Thotakura/ Amaranth leaves – 2 bunches
- Oil – 3 tbsp.
- Mustard seeds – ¼ tbsp.
- Jeera – ½ tbsp.
- Chana dal – ½ tbsp.
- Moong dal – ½ tbsp.
- Green chillies – 4 No.
- Garlic cloves – 1 tbsp. finely diced
- Onions – ½ bowl
- Dry red chillies – 2 No.
- Curry leaves – 1 tbsp.
- Tomatoes – ½ bowl
- Salt – 1 tbsp.
- Turmeric powder – ½ tbsp.
- Red chilli powder – ½ tbsp.
- Coriander powder – ½ tbsp.
Instructions
- First clean Amarnath leaves and then slice to small pieces, keep aside.
- In a pan, heat oil and add chana dal, jeera, moong dal, mustard seeds and green chillies.
- Saute for a while till mustard seeds splutter.
- Add Onions, garlic pieces, curry leaves and dry red chillies. Cook till onions turn soft.
- Put thotakura and cook on low to medium flame till leaves shrink.
- Add tomatoes, turmeric powder and salt. Cook further with lid covered till tomatoes turn soft.
- Sprinkle red chilli powder and cook further till leaves are cooked.
- At the end sprinkle coriander powder and mix well.
- Serve Thotakura Tomato Curry or Amaranth Leaf Curry hot.

How to make Thotakura Tomato Curry:
1. Heat oil in a pan, add mustard seeds, jeera and chana dal.
2. Add moong dal and slit green chillies. Saute for a while.
3. Put finely sliced garlic and onions, dry red chillies and curry leaves.
4. Add finely sliced thotakura, mix for a while till they turn soft.
5. Put tomatoes, sprinkle salt and turmeric powder, mix and cook for 10 minutes with lid covered.
6. Add red chilli powder and cook with lid covered till the curry is done.
7. Sprinkle coriander powder and mix well. Serve Amaranth Leaf Curry or Thotakura Tomato curry with steam rice or with chapatti.
