This recipe almost resembles vegetable fried rice but the only difference is we add corn kernels. People who love to eat non-vegetarian may add eggs to this recipe. Also, we can serve this recipe accompanied by veg or non-veg Manchurian recipes. This combination will surprise you.
The best thing about this recipe is that we can use leftover rice because it’s not sticky. And if we do not have fresh corn, we can even make use of frozen corn. If you’re making this lunch box recipe, then I would suggest you use freshly cooked rice.
Usually the Chinese recipe uses Ajinomoto or msg to enhance its flavor but we haven’t added that ingredient so it stays healthy and nutritious. The apple cider vinegar gives it a good taste but if you don’t have it then we can even substitute it with lemon juice.
Tips to make a perfect sweet corn fried rice recipe:
- Once the sweet corn becomes soft, remove the water from it and keep it aside. If kept in the same water it gets hard.
- We can use basmati rice or even leftover cooked rice.
- Normally sweet corn takes less time to cook hence add water in small quantities.
- If you don’t want to add vinegar we can replace with lemon juice

Ingredients
- Sweet corn – 1 cup
- Cooked Rice – 1 bowl
- Oil – 2 large spoons
- Salt – 1 tbsp.
- Garlic – 1 tbsp. minced
- Onions – 3 tbsp.
- Carrot – 3 tbsp.
- Capsicum – 3 tbsp.
- Red chili sauce – 1 tbsp.
- Soya sauce – 2 tbsp.
- Vinegar – 1 tbsp.
- Black pepper powder – ½ tbsp.
- Coriander leaves – 2 tbsp.
- Water to boil
Instructions
- To boil sweet corn, pour little water into a vessel and sprinkle a little salt.
- Close the lid and cook for 5 minutes. As sweet corn doesn’t take much time to cook.
- In a pan add little oil and put chopped garlic, carrot, capsicum, carrot, and boiled sweet corn.
- Cook for a minute and add soya sauce, red chili sauce, and vinegar. Mix well.
- If you already have cooked rice, add it, or else cook rice making it non-sticky.
- Add boiled rice, sprinkle salt as per your taste, and black pepper powder, and mix well.
- Garnish with coriander leaves and serve sweet corn-fried rice hot.

How to make sweet corn fried rice recipe:
1. Add water to a vessel and put sweet corn. Sprinkle ¼ tbsp. salt and cook for 5 minutes with the lid covered.
2. Usually sweet corn gets cooked in less time, to check break corn with your fingers, if it breaks then drain water and keep it aside.
3. Heat oil in a pan and add minced garlic, onions, carrot, and capsicum. Mix all ingredients.
4. Add corn, red chili sauce, soya sauce, and vinegar. Mix well.
5. Put cooked rice, and sprinkle ¾ tbsp. salt, black pepper powder, and mix well.
6. Garnish sweet corn-fried rice with coriander leaves and serve hot.
