Because of its health benefits and simplicity people started making experiments and now we have many egg recipes next to chicken recipes. Our version of the recipe goes well with both Indian variants of bread like plain paratha, butter naan, chapati etc. and rice recipes like pulao and biryanis.
As said our Egg curry Recipe is simple, if you want we can even add coconut milk, coconut grate or even cashew to give gravy. I have substituted the above ingredients with onion and tomato paste to give thick gravy. To enhance our recipe’s taste we have added 2 tablespoons of curd.
Tips to make a simple egg curry recipe:
- To get rich and creamy gravy we can substitute onion-tomato paste with coconut or cashew paste.
- Add salt or lemon pieces while boiling eggs so that they get cooked well without cracks.
- Although we can add eggs directly into the curry, frying them with a blend of spices will enhance the flavour of our recipe.
- Pierce eggs with a knife or fork so that it absorbs the flavours of spices.
- We have added green chillies at the end to give mild spiciness as we have already added red chilli powder while making the curry.

Ingredients
- Eggs – 5 No.
- Oil – 6 tbsp.
- Onions – 1 bowl
- Garlic cloves – 10-12 No.
- Ginger pieces – 2 tbsp.
- Tomatoes – 1 cup
- Salt – ¾ tbsp.
- Turmeric powder – ½ tbsp.
- Red chilli powder – 1 ¼ tbsp.
- Cinnamon sticks – 2 No.
- Green cardamoms – 3 No.
- Bay leaves – 2 No.
- Cumin seeds – ½ tbsp.
- Curd – 2 tbsp.
- Water – 2 cups
- Green chillies – 2 No.
- Coriander leaves – 2 tbsp.
Instructions
- Add little oil in a pan and fry onions till they turn soft. Add ginger-garlic pieces and tomatoes.
- Cook for a while till all ingredients are cooked. Off the flame and transfer to a plate, let them cool.
- If you have already boiled eggs, remove the shell and pierce them with a knife or a fork.
- With leftover little oil in the pan put eggs, sprinkle salt, turmeric powder and red chilli powder. Fry for a while and transfer to plate and keep aside.
- Put tomato-onion mix in a mixer grinder and grind for one round. Put little water and grind further to get a soft paste.
- Add little oil in a pan and add cinnamon sticks, bay leaves, cumin seeds, salt, turmeric powder, green cardamoms, red chilli powder and tomato paste.
- Mix all ingredients and cook for a minute with the lid covered on a low flame.
- Put curd for additional flavour, add 2 cups of water and boil to get a thick gravy.
- Add fried eggs and cook for 2-3 minutes by closing with a lid.
- Garnish with slit green chillies and coriander leaves. Serve simple egg curry recipe hot.

How to make a simple egg curry recipe:
1. Heat 4 tbsp. oil in a pan, add sliced thin wafers of onions and saute for a while till they turn soft. Add garlic and ginger pieces.
2. Add tomatoes and cook for a while till they turn soft and transfer to another plate and let them cool.
3. Pierce eggs and sprinkle ½ tbsp. salt, ¼ tbsp. turmeric powder and red chilli powder.
4. If you are left with oil continue with it or else add 1 tbsp. of oil and cook for a while. Transfer to another plate and keep aside.
5. Put cooked tomatoes in a mixer grinder and make soft-paste by adding a little water.
6. Add 1 tbsp. oil and add cinnamon sticks, green cardamoms and bay leaves.
7. Put cumin seeds, tomato paste, ½ tbsp. salt and ¼ tbsp. turmeric powder.
8. Sprinkle 1 tbsp. red chilli powder and mix well. Cook for 2-3 minutes with lid covered on low flame.
9. Add curd and 2 cups of water. Mix well and bring it to a boil.
10. Put boiled eggs and cook for 3 minutes with lid covered.
11. Garnish simple egg curry with slit green chillies and coriander leaves. Serve hot.
