Shrikhand Recipe is one of the varieties of recipes from India which is served along with puries. You find this type of tradition in Maharashtra. Because of its rich golden yogurt color, children love to eat it. We find this Indian dessert during the festive season of Janmashtami, the birth of Lord Krishna.

Usually, it is made from strained curd locally named as hung and sugar. As it is made with the blend of yogurt and sugar, it is thick creamy and sweet.

In the process of making hung, we squeeze water and put it in a clean muslin or cotton and leave aside overnight so that all water is drained. If we want we can make it simple by following our steps or else we can even add mangoes and fruits.

While making this recipe, we should not be in hurry by trying to squeeze water from yogurt instead it’s a better option to hand overnight. During the night as the temperature is cold, yogurt will remain sweet rather than sour or else you can even put in a skillet and follow the same process and keep in a refrigerator.

Tips to help you make a delicious Shrikhand recipe:

  1. Use the right yogurt: Use full-fat Greek yogurt or hung curd for the best results. This will ensure that the Shrikhand is thick and creamy.
  2. Hang the yogurt: To make hung curd, tie the yogurt in a cheesecloth and hang it for at least 2-3 hours to drain the excess liquid. This will help the Shrikhand to be thick and creamy.
  3. Use powdered sugar: Use powdered sugar instead of granulated sugar to ensure that the sugar dissolves completely and gives a smooth texture to the Shrikhand.
  4. Use fresh cardamom and saffron: Freshly ground cardamom and saffron add a delicate flavor and aroma to the Shrikhand. It’s best to use fresh spices instead of pre-ground ones for the best flavor.

Ingredients

  • Sugar – 300 gms.
  • Yogurt – 1/2 kg
  • Cardamom powder 1/2 tsp.
  • Pista & Almond crushed – 1/2 tsp.
  • Saffron – few strands

Instructions

How to Make Shrikhand Recipe:

  1. Squeeze water out of yogurt and tie it in a clean muslin cloth overnight (around 6-7 hours).
  2. Take out the squeezed yogurt into a bowl, add sugar and mix well.
  3. Keep aside for 25-30 minutes and allow sugar to dissolve.
  4. Crush saffron with hand gently in 1 tablespoon milk and keep aside.
  5. Beat the sugar in the yogurt so that sugar gets fully dissolved in yogurt.
  6. Pass through a strong strainer which has holes, you can press with hand or spatula.
  7. Mix cardamom powder and dissolved saffron and half nuts.
  8. Shrikhand is ready. Serve chilled dressed with remaining half nuts
