Rice flour onion vada | Ulli Vada Recipe is one of the crunchy and soft fritters made with onions and rice flour as the main ingredients. Learn how to make rice flour onion vada with step by step image instructions along with tips and a video.
Ulli vada is adopted from the Kerala style, it is one of the popular evening snacks which can be prepared instantly and with fewer ingredients. This recipe can be prepared using gram flour but I made a mild change where we use only rice flour.
Using gram flour will give a slightly soft texture but as we have used only rice flour it has a crisp texture and we will feel light on the stomach. Adding besan flour will make it onion parkora with slight changes in ingredients.
During the process of deep-frying batter is shaped into cutlets and then fried at low to medium temperature so that we have a crispy layer with soft and cooked onions inside. One hardly finds oil over vada and tastes great when served with tomato ketchup.
Tips to make a perfect Rice flour onion vada:
- Slicing onions into thin wafers will make them absorb spices.
- While adding water pour in small quantity so that batter remains hard.
- Make cutlet shape and keep them aside so that they dry and absorb less oil.
- When deep-frying, maintain low to medium flame so that we get a crispy texture.
