In Hindi, we call with the name pakora whereas in Telugu, we use bajji and during evenings we find many variants of bajji and vada snacks on the streets. People love to eat them accompanied by a cup of tea as a refreshing food.
Pakora or Bajji recipes can be made with many vegetables keeping gram flour as the main ingredient. Whereas spices remain the same with many variants, we can make small changes here and there.
As raw bananas are available all year and are cheap, people in South India like to make this recipe as a savory item during special occasions and marriages. When choosing this veggie, we need to take care that they are green in color or give a sweet taste.
Tips to make a perfect raw banana bajji recipe:
- Adding a little soda will make aratikaya bajji soft and puffy.
- Make besan flour batter to a thick consistency so that the batter coats slices well to give a thick and puffy texture.
- Put raw banana slices in salt water so that they do not turn black.
- To get a thick batter coat to raw banana slices we need to clean them over a clean cloth.
- People who love to eat a bit spicy can make a paste of ginger, garlic, green chillies and onions. Mix this paste along with spices in besan flour.
- After making this recipe if you are leftover with batter add few onions to make onion pakora.
- When deep fried, always put flame at a medium temperature so that we can cook evenly giving it a crispy texture.

Ingredients
- Raw Bananas – 2 No.
- Besan flour – 1 bowl
- Turmeric powder – a pinch
- Salt – 1 ¼ tbsp.
- Red chilli powder – ½ tbsp.
- Soda – a pinch
- Thymol seeds – ½ tbsp.
- Rice flour – 1 tbsp.
- Garam masala powder – ¼ tbsp.
- Oil – to deep fry
Instructions
- In a mixing bowl, add besan flour, rice flour, garam masala powder, red chilli powder, soda, salt, turmeric powder and thymol seeds.
- Mix all ingredients and pour water in small quantities and mix well to get lump free thick batter.
- Meanwhile, put a frying pan and add oil to it. Keep low to medium flame and let temperature attain optimum level.
- Peel the skin and slice the banana into thick and long pieces.
- Put these slices in saltwater so that they do not turn black.
- To keep batter concentration thick, let’s remove banana slices and dry over a clean cloth.
- Once the oil is ready, dip aratikaya pieces in batter and coat both sides.
- Put them gently in oil and deep fry by stirring occasionally till turn golden brown colour.
- Using a colander remove from oil and transfer over a kitchen towel to drain excess oil.
- Serve crispy raw banana bajji recipe as a tea time snack accompanied with pudina chutney.

How to make a raw banana bajji recipe:
1. Add besan flour in a mixing bowl, turmeric powder, salt and red chilli powder.
2. Put a pinch of eating soda, thymol seeds, rice flour and garam masala powder. Mix all ingredients by adding a little water.
3. Pour a little water and mix well to make a thick batter.
4. Heat oil in a pan and bring to optimum temperature.
5. Put a little salt in water, peel raw banana skin and slice it into pieces. Put them in salt water.
6. Rinse pieces in salt water and put them over a clean cloth and dry them.
7. Put 2-3 tbsp. hot oil in besan batter and mix well. Let the batter consistency remain thick.
8. Dip dried slices in batter and coat well. Put them gently in oil and deep fry aratikaya bajji.
9. Once they turn colour, flip to the other side and deep fry till they turn a golden brown colour.
10. Remove the raw banana bajji recipe from the oil and transfer it to a serving plate.
