Ingredients

  • Prawns – 500 gms.
  • Turmeric powder – ½ tbsp.
  • Salt – ½ tbsp.
  • Oil – 6 tbsp.
  • Onions – 1 cup

  • Ginger garlic paste – ½ tbsp.
  • Curry leaves – 2 tbsp.
  • Red chili powder – ¾ tbsp.
  • Garam masala powder – ¼ tbsp.
  • Jeera powder – ¼ tbsp.
  • Coriander powder – ¼ tbsp.
  • Coriander leaves – 2 tbsp.

Instructions

  1. In a mixing bowl, combine cleaned prawns with 14 tbsp turmeric powder and 14 tbsp salt. Combine thoroughly.
  2. Heat the oil in a pan and add the prawns. Cook on high heat until the water is released and the vegetables are done.
  3. Oil spills out after cooking. Turn off the heat and transfer to a new platter.
  4. Add extra oil to the pan and add the grated onions, slit green chilies, and ginger garlic paste.
  5. Stir in the curry leaves, cooked prawns, 14 tablespoon turmeric powder, and salt to taste.
  6. Sprinkle with red chilli powder (adjust to taste, as we’ve already added green chilies).
  7. To improve flavour, sprinkle garam masala, coriander, and jeera/cumin powder in little amounts (approximately 14 tbsp). Combine thoroughly.
  8. Garnish the fried prawns with coriander leaves and serve immediately.

Tips to make perfect prawns fry recipe:

Use fresh prawns: Fresh prawns must be used. They should have a mild, fresh sea smell and firm, translucent flesh which must not be slimy.

Clean Prawns: Shell them and devein the prawns. Their tails may be left intact for presentation purposes if that is what you are after.

Marination: Marinating the prawns gives it a great flavor. We can marinate for 30 to an hour if you are making this recipe immediately, or else we can even refregirate overnight with a mix of spices such as turmeric, red chili powder, cumin, chania, and some salt. A pinch of lemon juice or vinegar can also lend a tangy taste to it.

Time of marination: This should be at least for 15-30 minutes so that the flavors penetrate inside.

Breaded (optional): coat with a layer of rice flour or cornstarch; if additional coating is done, that will provide an additional crunchy coat. One should not pour the extra amount of flour on the prawn so that the coat will not become too thick and sticky.

Deep Fry Use a very smoky oil such as vegetable or canola oil. You have to heat it enough prior to adding the prawns. To test, just use a small portion of bread. It should sizzle and brown in seconds
