Potato Bonda Recipe, How to make Aloo Bonda, Batata Vada, Aloo Bonda
Potato Bonda Recipe or Aloo Bonda made with mashed potato is one of the famous street foods in Mumbai.
It is a deep-fried snack recipe made from mashed potatoes, gram flour and spices. In other places of Maharashtra, people also call with the name batata vada.
Potato Bonda recipe goes well with coriander chutney, coconut chutney or even tomato ketchup. I found many daily workers eat this recipe for just tea as an evening snack.
During the winter season, it is one of the best selling street snack recipes. It is crispy outside and smooth and spicy from inside.
Potato Bonda Recipe, How to make Aloo Bonda, Batata Vada, Aloo Bonda
Ingredients
For stuffing AlooBonda Recipe:
- Potatoes – 1/2 kg.
- Onion - 1 no. big
- Mango powder/ Amchur - 1 tbsp.
- Coriander leaves - 2 tbsp.
- Curry leaves - 1 tbsp.
- Mustard seeds - 1/4 tbsp.
- Garam masala powder - 1/4 tbsp.
- Green chilies - 4 nos.
- Hing - a pinch
- Red Chili powder - 3/4 tbsp.
- Ginger Garlic paste - 1/4 tbsp.
- Turmeric powder - 1/4 tbsp.
- Oil - 3 tbsp.
- Salt - 1/2 tbsp. as per your taste
For Batata Bonda batter:
- Besan/ gram flour – 1 cup
- Rice flour - 1/4 cup
- Baking powder - 1/4 tbsp.
- Ginger garlic paste - 1/2 tbsp.
- Salt - 1/2 tbsp.
- Turmeric powder - 1/4 tbsp.
- Red chili powder - 3/4 tbsp.
- Garam masala powder - 1/4 tbsp.
- Water - to make the batter.
Instructions
Preparing Batata Vada Filling:
- In a vessel, put potatoes and pour water till they are submerged.
- Boil till they are cooked to soft, remove the skin and mash them.
- Heat oil and add mustard seeds, curry leaves, and green chilies.
- Add sliced onions, red chili powder, asafoetida, and salt.
- Sprinkle garam masala powder, turmeric powder, mango powder and add ginger garlic paste.
- Saute for a while, add mashed potatoes and cook for a while.
- Mix coriander leaves and off the heat, keep aside.
Aloo Bonda Batter:
- In a wider vessel, add gram flour, rice flour, ginger garlic paste.
- Add baking powder, turmeric powder, salt, garam masala powder and red chili powder.
- Mix all ingredients and add little water to make a thick and soft batter.
Making Potato Bonda recipe:
- Once potato curry is cooled, make small balls and dip them in the batter.
- On another hand, heat oil in a kadai and gently put them into oil.
- Deep fry them till they turn their color to golden brown.
- Serve Potato Bonda Recipe or Aloo Bonda with pudina chutney.

How to Make Potato Bonda Recipe:
Preparing Batata Vada Filling:
- Boil potatoes and mash them once they are cooled, keep aside.
- Heat pan, add oil and put curry leaves, mustard seeds, once they start spluttering add chopped green chilies.
- Slice onions and add to above mix, add asafoetida, red chili powder, and salt.
- Add garam masala powder, ginger garlic paste, turmeric powder and amchur (mango powder).
- Mix all the ingredients and add potato mash and cook for a minute.
- Add coriander leaves and off the heat.
Aloo Bonda Batter:
- Sieve gram flour/ bean flour for any insects or dust.
- Add 1 cup gram flour, 1/4 cup rice flour, baking powder and ginger garlic paste.
- Continue adding salt, turmeric powder, red chili powder and garam masala powder and mix well.
- Add required water to make a thick batter.
Making Potato Bonda recipe:
- Make small balls of potato curry and keep aside.
- Dip these balls in the batter and deep fry in hot oil.
- When they start changing color, flip to other side and remove from oil once they attain golden brown color.
- Potato Bonda Recipe or Aloo Bonda goes well with pudina chutney or tomato ketchup.
