Pearl Millet Laddu | Kambu Laddu Recipe

We can either make jaggery syrup to knead flour or just grind millet chapatti to a soft paste. We can make this recipe in different ways. One of the options is to steam flour and knead by adding jaggery syrup and the other is our method.
To enhance the flavour of the Kambu Laddu Recipe we have added hot water to knead flour and then made chapatti by frying with ghee. They are then crushed to a soft batter by adding jaggery and then topped with fried dry fruits.
As jaggery is added directly and we have added a generous quantity of ghee its flavour will mesmerize you. Also, you don’t find any stickiness of jaggery. You may also add sugar to make this recipe but jaggery is healthier than sugar.
Tips to make the perfect pearl millet laddu recipe:
- Adding hot water while making dough will give mild stickiness which helps in bonding dough.
- While pressing dough to roti shape, using an oiled sheet will make it easy.
- When frying millet roti, do not worry about cracks as we roast it only to enhance flavour.
- Crush dry fruits to small sizes including raisins so that we can make laddu easily without any cracks.
- Our version of laddu melts in the mouth and is very soft, if you want to make it harder then make use of jaggery syrup.
- We can add cardamom powder to give a nice aroma.

Ingredients
- Pearl millet flour – 1 bowl
- Salt – ¼ tbsp.
- Ghee – 4 tbsp.
- Hot water – to knead the flour.
- Jaggery – 1 cup
- Almonds – 1 tbsp.
- Cashew – 2 tbsp.
- Raisins – 1 tbsp.
Instructions
- In a mixing bowl, add pearl millet flour, salt, ghee and hot water in batches to get a hard dough.
- Knead the dough for a while so that we get mild stickiness. This helps in making chapatti shape.
- As rolling cannot be done with this dough, we make the shape of the disc directly by pressing with fingers.
- To make it easy, make use of a polythene sheet and little ghee. ( I have used oil packing cover as polythene sheet as it’s greasy.)
- Grease frying pan either with oil or ghee and gently place dough sheet and roast till its golden colour on both sides.
- Once these sheets are cooled, crush them into small pieces and add jaggery to them.
- Put this mix in a mixer grinder and grind to make a soft paste.
- Transfer this paste to a mixer bowl and keep it aside.
- Heat ghee in a tadka and roast dry fruits till they turn golden brown. Pour this mixture over millet dough while it’s hot.
- Mix the whole mixture and take a small portion of dough and roll to get round shapes.
- Perl Millet Laddu or Kambu Laddu Recipe should be consumed within 3 days or else it becomes sour.

How to make pearl millet laddu recipe:
1. Add pearl millet flour in a mixing bowl, add a pinch of salt, 2 tbsp. ghee and hot water in small batches.
2. Mix dough and take a small portion of dough and press over a polythene cover to make a thin disc shape. Grease the frying pan and gently place it over it.
3. Once they turn a golden colour, flip to another side. Once they are done transfer to another plate.
4. When chapatti turns cool, break into small pieces and put them in a mixing bowl. Add jaggery and transfer this mix to the mixer grinder.
5. Grind to a soft paste and transfer to the same mixing bowl. Keep aside.
6. In a tadka vessel, heat 2 tbsp. ghee, almonds, cashew and raisins.
7. Once dry fruits turn golden brown, put them in dough mix while ghee is hot.
8. Mix well and press to make a round shape. Place pearl millet laddu on a plate and store in an air-tight container and consume within 3 days.
