Onion Fried Rice or Spicy Onion Rice is one of the simple yet delicious recipes which can be made with fewer ingredients. I have added sprouted green peas to give nutritional punch to this recipe.

Whenever I feel lazy I prefer making onion rice as this can be made even without beans. Sometimes I prefer adding spring onions as it adds more flavor. Also if we are left with plain rice this recipe or egg fried rice becomes my favorite food.

Apart from all above, rice has become a staple food in major parts of Asia. We can make an onion fried rice recipe with normal rice grains or even basmati rice all we need to take care is to keep grains nonsticky for which we can add a little oil while cooking rice.

Onion fried rice is quite palatable and filling. Cooked rice, sautéed onions, and at least a few vegetables add value to this dish. Fry rice in cold, overnight rice so that while they are frying, the chunks do not stick to the pan.

Caramelize the onions first; all the other vegetables and cook the rice with the aid of soy sauce. It is optional to add scrambled eggs on top and thus increase the proportion of proteins. The dish is excellent and can be served either as a side or main course; it’s versatile in terms of its ingredients as well. Serve it topped with green onions or sesame seeds to give it a fresher taste.

Tips to make the perfect onion fried rice recipe:

Prepare Your Ingredients: Chop onions as well as other vegetables ready before you start cooking, to facilitate the process.

Use Old, Cold Rice: Old rice does not clump. It, therefore, fries great

Heat the Pan: Heat the pan or wok before filling it with oil. Do this to get a good seal on the onions.

Fry Onions: First Start by frying the onions to translucent and lightly caramelized brown.

Add the vegetables: If using other vegetables, add them after the onions are cooked. Stir-fry for a couple of minutes until they are tender.

Add the rice: Add the cold rice, breaking up any clumps with a spatula. Stir-fry for several minutes until the rice is heated through.

Season well: Drizzle soy sauce evenly over the rice while stirring. Add to taste.

Eggs: Push rice to one side of pan; scramble eggs on the other side; mix eggs into rice when cooked.

Green Onions: Throw a few chopped green onions across the top just before eating for a fresh flavor at the end of onion fried rice recipe.

Taste it: Taste the rice with ten or so minutes to go for serving and add more salt, pepper, or sometimes a splash of soy for added depth. A spot of sesame oil can also serve a similar purpose.

Ingredients

Measurement – 1 cup = 200 ml.

  • Onions – 1 ½ cups.
  • Green chilies – 4-5 no.
  • Cooked Rice – 1 large bowl
  • Sprouted Green peas – 1 cup
  • Mustard seeds – ¼ tbsp.
  • Cumin seeds – ½ tbsp.
  • Garlic – 1 tbsp. finely chopped
  • Turmeric powder – ¼ tbsp.
  • Salt – 1 ¼ tbsp. as per your taste
  • Lemon extract – ½ piece.
  • Coriander leaves – 2 tbsp.
  • Oil – 2 spoons

Instructions

  1. Heat oil in the pan, cumin seeds, garlic pieces and mustard seeds.
  2. Add onions, green chilies and sprouted fresh beans.
  3. Add ¼ tbsp. Salt and sauté till onions turn its color to light golden brown.
  4. Sprinkle ¼ tbsp. Turmeric powder and mix well.
  5. Add 1 tbsp. salt to rice and loose rice with hands.
  6. Put this rice to onion mix and mix well.
  7. Add lemon extract before removing from heat.
  8. Mix well and serve hot by garnishing with coriander leaves.

How to Make Onion Fried Rice Recipe:

  • Add two spoons of oil to the pan and add mustard seeds, cumin seeds, and finely chopped garlic pieces.

  • As onions are the main ingredient of our recipe, finely chop onions add 1 ½ cup to 2 cups of onions.

  • Add green chilies and sprouted fresh beans. Mix well.

Tip: You can even use normal fresh beans but sprouted beans have more nutrients.

Tip: If we want sprouted beans, we need to put peas in a clean muslin cloth with mild moisture.

  • Add ¼ tbsp. Salt and mix well. Cover with a lid and cook on low flame for a minute.

  • Above salt cooks onions faster and locks color, now again add ¼ tbsp. Turmeric powder and 1 tbsp. Salt.

  • Add cooked rice to this mix and mix well.

  • Although we don’t add any spices, adding lemon extract makes this recipe sweet and tangling.
