Oats Vegetable Soup Recipe is one of the easy and nutritious healthy soups one can make in a jiffy. Based on the veggies available we can make this recipe.
We can lower or thicken the consistency of this recipe based on your interest. Adding fresh butter will enhance the flavor of this recipe.
When you get bored of clear soups and normal tomato soup we can try this recipe to get thick and creamy soup.
In our recipe, we have added only two vegetables which are carrots and beans, if you want you can add green peas, sweet corn, etc. based on your taste.

- Adding butter instead of oil increases the flavour of the soup.
- Apart from carrots and beans, you can add your favourite vegetables to increase their nutritional value.
- Usually, a thick consistency suits this recipe so add adequate water. (When cooled soup thickens).
- Dry roasting oats make it non-sticky.
- Slicing veggies into fine slices not only helps cook faster but releases their flavour into Oatmeal Soup Recipe.
- We can add oregano to give a spicy punch along with pepper powder.

Oats Vegetable Soup is one of the easy and nutritious healthy soups one can make in a jiffy. Based on the veggies available we can make this recipe.
Ingredients
- Oats – ½ cup.
- Butter – 1 tbsp.
- Garlic – 1 tbsp. finely sliced
- Ginger – 1 tbsp. finely sliced
- Carrot – 1 cup. sliced
- Beans – 1 cup sliced
- Onions – 2 tbsp.
- Green chillies – 1 tbsp. sliced
- Water – 2 glasses
- Salt – ½ tbsp.
- Pepper powder – ½ tbsp.
- Lemon Juice – 1 tbsp.
Instructions
- In a pan, dry roast oats till they change slight colour on low to medium temperature.
- Put butter in a pan, when it melts add ginger and garlic pieces and sauté.
- Add what all veggies you have, in our recipe we have added fewer veggies like beans and carrot only.
- Along with this veggies add onions and cook for a while with lid covered.
- Add green chillies, roasted oats and water, mix well.
- Sprinkle pepper powder and salt, mix and cook for 5 minutes with lid covered.
- Although we have added green chillies, if you want to have it a bit spicy we can add oregano.
- Usually, oats get cooked fast, once you get your required consistency off the flame and add few drops of lemon extract.
- Serve Oats Vegetable Soup hot.

How to make Oats Vegetable Soup Recipe:
1. Dry roast oats for a minute or two at medium temperature.
2. Heat butter in a pan, add finely sliced ginger and garlic pieces, sauté for a while.
3. Add sliced carrot, beans, onions and mix all veggies. Close the lid and cook for a while.
4. Put green chillies and roasted oats, mix well.
5. Add water, salt, pepper powder and mix well. Cover the lid and cook for 2-5 minutes.
Tip: If you want this soup to have a spicy flavour, we can add oregano.
6. Once Oats Vegetable Soup is done, turn off the stove, add lemon extract before serving.
