If you want to make it in village-style then we have to mix all ingredients at a time and mix them and cook on a wood fire and mud pots. In this style, one can experience the flavor of wood smoke in each bite of Natu Kodi Kura.

Usually, this recipe is consumed accompanied by minapa garelu or ulundu vadai in Andhra and ragi sankati in Rayalaseema. When compared to broiler chicken, the country’s version is healthier as it is farmed with natural food.

Among all chicken recipes, Spicy Natu Kodi Curry  Andhra style is the tastiest food. Although it is cooked similarly to the broiler version, there will be a few changes here and there. The only reason why this recipe tastes great is country chicken.

In villages, the rooster is preferred for cooking, they pluck feathers and roast them on a wood fire and clean skin by applying turmeric powder to disinfect. This process not only disinfects but also elevates the flavour. If you like you may cut small pieces or big as per your interest.

Ingredients

  • 1 Kg. Chicken
  • 4 tbsp. Oil
  • 3 No. Cinnamon sticks
  • 4 No. Cloves
  • 3 No. Green cardamom crushed
  • 1 Large bowl Onions
  • 4 No. Green chillies
  • 2 tbsp. Curry leaves
  • tbsp. Ginger garlic paste –
  • ½ tbsp. Turmeric powder
  • 2 tbsp. Salt
  • 1 bowl Tomatoes
  • tbsp. Red chilli powder
  • 500 ml. Water – 500 ml.
  • 1 tbsp. Coriander powder
  • 2 tbsp. Coriander leaves

Instructions

  1. Clean chicken with turmeric powder and slice pieces as per your taste and interest.
  2. In a kadai, heat oil and fry green cardamoms, cinnamon sticks, cloves and onions.
  3. Add curry leaves, green chillies and ginger-garlic paste.
  4. Saute for a while so that ginger garlic paste is cooked.
  5. Add chicken pieces and mix well so that the spices and flavours are coated well.
  6. Sprinkle salt and turmeric powder and cook for 5 minutes with lid covered.
  7. Add tomato pieces, mix and cook further for 5 minutes.
  8. Sprinkle red chilli powder and pour little water and mix well.
  9. Tip: You may add a bit more red chilli powder as per your taste to make Country chicken Curry spicy.
  10. Cook for 5 more minutes as pieces are hard to cook.
  11. When you feel pieces are almost cooked, sprinkle coriander powder and mix well.
  12. Cook for a minute or two and transfer to a serving bowl.
  13. Garnish Natukodi Curry with coriander leaves and serve hot with veg biryani or ulundu vadai.

How to make Spicy Natu Kodi Kura Andhra Style:

  • Heat oil in a pan, add cinnamon sticks, cloves and crushed green cardamoms.

  • Continue adding onions, green chillies, curry leaves, and ginger garlic paste. Saute for a while till the ginger garlic raw flavor is cooked.

  • Add chicken pieces and mix well.

  • Sprinkle turmeric powder and salt. Mix well.

  • Cover the vessel with a lid and let it cook for 5 minutes on low heat.

  • Add sliced tomatoes and mix well.

  • Cover the vessel again with a lid and let it cook further 5 more minutes till tomatoes turn soft.

  • Sprinkle red chilli powder and add 500 ml. water and mix well.

  • Cook further for 5 minutes with the lid covered.
  • Add coriander powder or chicken masala powder just before the recipe is done, and mix well.
