The word “nalla + karam + podi” means black + chili (made by grounding dry red chilies + powder (ground). People who love to eat spicy chutney or eat spicy foods love to eat this powder. I have observed people eating this powder accompanied by coconut chutney along with breakfast recipes.
This recipe is not just spice powder, it is made by adding healthy ingredients like curry leaves, jeera, garlic and urad beans. When we add melted ghee along with spice powder its flavor is enhanced. In short, it is a blend of nutritional values.

Nalla karam podi recipe

Ingredients
- Dry red chili – 50 gms.
- Oil – 2 tbsp.
- Urad beans – 2 tbsp.
- Fenugreek seeds – ¼ tbsp.
- Coriander seeds – 1 cup
- Cumin seeds/ jeera – 1 tbsp.
- Curry leaves – 1 tbsp.
- Garlic cloves – 1 cup
- Tamarind pulp – Lemon size
- Crystal Salt – 1 ½ tbsp.
Instructions
- Roast dry red chilies by adding little oil to a pan. Roast on low flame till they turn crisp and change their color to mild dark.
- Transfer to another plate and add urad beans, coriander, fenugreek, and cumin seeds.
- Roast for a minute and add garlic cloves, curry leaves and tamarind pulp.
- Transfer to another plate and let all spices cool.
- Put roasted dry red chilies in a mixer grinder and grind for a round.
- Add crystal salt and grind further to get a coarse texture. Transfer to a bowl.
- Put spices and remaining dry red chilies and grind to a powder.
- Mix both spice powders to get Nalla karam podi recipe.
How to make nalla karam podi recipe:
1. In a pan add 2 tbsp. oil and dry red chilies. Roast them on low flame, once you find a color change, transfer them to another plate.
2. Add urad beans, fenugreek seeds, coriander seeds and cumin seeds.
3. Dry roast all spices on low flame, add curry leaves, garlic cloves and tamarind pulp.
4. Roast for a while and transfer to another plate. Let all ingredients cool.
5. Once cooled, transfer to mixer grinder bowl and grind to coarse, add dry red chilies and grind.
6. Add crystal salt and grind to a coarse powder. Transfer to mixer bowl. Again put dry red chilies and grind to a coarse powder.
7. Pour chili powder into a mixer bowl and mix well. Nalla karam podi recipe goes well with hot rice accompanied with ghee.
