People who like to have creamy flavour can make cashew paste or almond paste instead of making powder out of them and add to the gravy. We can also add yoghurt for a smooth consistency.

- Mushrooms act like a sponge as they absorb water during washing so it’s better not to soak or wash with water.
- It’s best to clean gently with a brush and wipe with a damp towel.
- We need to clean it properly as it is a chance of having insects.
- Check the expiry date on the pack as this belongs to fungus family they may spoil.
- To increase the shelf life of mushrooms, always refrigerate. It’s a good idea to use when fresh.
- They take less time to cook, so take care while cooking as they may become mushy.
- Overcooking may burn the nutritional values present in this plant.
- As mushrooms have water in it, we need not add extra water to get a thick gravy. If you like to have gravy then we can add very little water.

Mushroom curry | Mushroom Masala Recipe is one of the nutritious and delicious recipes which can be served along with Indian bread recipes or rice recipes.
Ingredients
- Mushrooms – 250 gms.
- Cashew – 2 tbsp.
- Oil – 3 tbsp.
- Cinnamon sticks – 3 No.
- Cloves – 3 No.
- Green cardamoms – 2 No.
- Onions – 1 bowl
- Green chillies – 5 No.
- Ginger garlic paste – ½ tbsp.
- Tomatoes – 1 cup
- Turmeric powder – ½ tbsp.
- Salt – 1 tbsp.
- Red chilli powder – 1 tbsp.
- Coriander powder – ¾ tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- Let’s first start with cashew powder, dry roast cashew on low flame and once they change their colour, transfer to another plate and let them cool.
- In a pan add little oil, green cardamoms, cinnamon sticks, cloves, onions and green chillies.
- Once the onion turns soft, add ginger garlic paste and stir till its raw flavour is cooked.
- Add tomatoes into a blender to make tomato puree and add to above mixture and mix well.
- Sprinkle turmeric powder, coriander powder, red chilli powder and salt.
- Add roasted cashew in a mixer grinder and grind to a powder. Put this powder along with above spices and mix well.
- Slice mushrooms into two halves so that they do not get overcooked and absorb flavours of above spices.
- Add mushroom pieces, mix and cook on low flame with lid covered.
- When the curry is done, one can find oil oozing out, sprinkle coriander leaves.

How to make the Mushroom Curry:
1. Dry roast cashew and roast them for a while and transfer to another plate.
2. Heat oil in a pan and add cinnamon sticks, cloves and green cardamoms.
3. Add finely sliced onions, green chillies, ginger-garlic paste and sauté for a while.
4. Put roasted cashew in a blender and make soft powder.
5. Add tomatoes in the blender and make a soft paste.
6. Put this tomato puree in onion mix and put turmeric powder, salt and red chilli powder.
7. Add coriander powder, cashew powder and mushroom pieces.
8. Mix and cook for 2 minutes with lid covered till moisture get released. Cook till oil oozes out.
