When we talk about the word biryani, many of us think either mixed vegetables or with meat but there are many other versions which we can try. Based on the method of cooking (normal or dum) flavour varies.
During the rainy season, we find them on our farm but then we need to take care while choosing the right variant as there may be poisonous. Natural geminated are more flavoured than cultivated.
As we all know mushrooms are packed with many nutritional values I tried to make it simple but nutritious.

TIPS to make perfect Mushroom Biryani Recipe:
- Always use branded basmati rice to get the perfect texture and experience its aroma.
- Try to use 2 year old rice so that rice yields large and grainy texture.
- When you soak rice for 30 minutes, try reducing water.
- Based on the size of the mushrooms, slit them and try to maintain medium size.
- Check the taste of the mushroom gravy before adding water, if needed adjust salt or sourness as per your taste.
- Do not overcook mushrooms if not they turn mushy once cooking is done.
- To enhance the flavour of this recipe, we can even add coconut milk but we need to adjust water we add.
- Based on the spiciness you like to have adjust No. of green chillies and garam masala powder.
Mushroom Biryani Recipe | Puttagodugula Biryani
Mushroom Biryani Recipe is one of the authentic nutritional recipes. Unlike other recipes preparing Mushroom Biryani is not that easy. You have to take much care while doing this.
Ingredients
- Mushrooms – 250 gms.
- Basmati rice – 250 gms. 1 bowl
- Water – 500 ml. 2 bowls
- Oil – 3 tbsp. 1 large spoon
- Cinnamon sticks – 4 No.
- Cloves – 7 No.
- Green Cardamom – 3 No. crushed
- Star anise – 1 No.
- Bay leaves – 3 No.
- Onions – 1 bowl 3 No.
- Green chillies – 5 No.
- Ginger garlic paste – 1 tbsp.
- Mint leaves – 1 cup
- Coriander leaves – 2 tbsp.
- Turmeric powder – ¼ tbsp.
- Salt – 1 tbsp.
- Red chilli powder – ½ tbsp.
- Coriander powder – 1 tbsp.
- Garam masala powder – ½ tbsp.
- Black pepper powder – a pinch.
- Curd – 1 cup
- Lemon extract – ½ piece
Instructions
- Clean and soak basmati rice for 30 minutes. Keep aside.
- In a thick bottom vessel, heat oil and add cinnamon sticks, green cardamoms, bay leaf, cloves and star anise.
- Add onions and green chillies, cook till they turn soft.
- Put ginger garlic paste and saute for a while till its raw flavour is cooked.
- Add tomatoes, turmeric powder, red chilli powder, black pepper, salt, garam masala powder, mint leaves, coriander leaves, curd and little lemon extract.
- Mix well and add mushroom pieces. Again mix and cook with a lid for 5 minutes.
- Once mushrooms are semi-cooked, pour rice soaked water and bring it to boil.
- While water is boiling, add rice and cook for 15-20 minutes till Biryani is done.
To enhance the flavour and aroma of Mushroom Biryani Recipe, put pure ghee over rice and place a lid so that it melts.

How to make Mushroom Biryani Recipe:
1. Clean basmati rice in a vessel and add two bowls of water. Soak for 30 minutes.
2. Heat oil in a thick bottom vessel and add cinnamon sticks, cloves and green cardamoms.
3. Add star anise, bay leaf, thin slices of onion and cook on low flame till onions turn soft.
4. Put slit green chillies and ginger-garlic paste, saute for a while till the raw flavour is cooked.
5. Add mint leaves and coriander leaves. Stir for a while and add finely sliced tomatoes.
6. Sprinkle turmeric powder, salt, red chilli powder and coriander powder.
7. Add garam masala powder, a pinch of black pepper, curd and half piece lemon extract.
8. Slice mushrooms into two halves and put them. Mix well so that mushrooms are coated with all spices.
9. Place a lid over the vessel and cook for 5 minutes.
10. Pour water used to soak rice and place a lid to get boiled. Once we see water boiling, put rice.
11. Let the rice cook on high flame till water and rice boil and then lower the flame and cook for 15-20 minutes.
12. Put little ghee over Mushroom Biryani Recipe and close the lid so that ghee melts and gives you a good flavour.
