Tips to make the perfect masala omelette recipe:

  • Make sure onions, tomatoes and other ingredients remain small so that the omelette doesn’t break while flipping.
  • While whisking eggs, if we add little milk will make it soft and puppy texture.
  • We can add any no. of veggies of our choice keeping in mind that their ratio doesn’t cross 50:50 or else we do not get perfect binding.
  • To get a nice texture always cook over low flame, if needed we may put a lid over it for 30 seconds.
  • When cooking on low flame we may wait till the surface turns mild dry.
  • If you are not using a non-stick pan then apply a generous quantity of oil, if needed add little oil to the edges to get a crispy texture.

Ingredients

  • Eggs – 3 No.
  • Onions – 1/2 cup
  • Tomatoes – 2 tbsp.
  • Green chillies – 1 tbsp.
  • Coriander leaves – 2 tbsp.
  • Turmeric powder – 1/4 tbsp.
  • Salt – 1/4 tbsp.
  • Red chilli powder – 1/2 tbsp.
  • Black pepper powder – 1/4 tbsp.
  • Ginger garlic paste – 1/2 tbsp.
  • Cumin powder – 1/4 tbsp.
  • Garam Masala powder – 1/4 tbsp.
  • Oil – 2 tbsp.

Instructions

  1. In a mixing bowl break 3 No. eggs and put sliced onions, tomatoes, coriander leaves, ginger garlic paste and green chillies.
  2. Sprinkle turmeric powder, red chilli powder, salt, cumin powder, black pepper powder and garam masala powder.
  3. Beat and mix all ingredients till we get a nice froth texture.
  4. Heat little oil on a pan and pour the egg mixture and spread to form a thin layer.
  5. Cook on low to a medium flame when the masala omelette starts rising check the bottom by gently raising it.
  6. When it turns golden brown flip to the other side and cook for a while.
  7. If needed add little oil on the edges to get a crisp texture and to make it non-sticky.
  8. Masala omelette tastes great when served hot and accompanied with chapati or roti.
