As compared to those from a fully mature jackfruit, this jackfruit seed curry is one of the lesser-known or prepared dishes, but it still forms part of the rich and popular South Asian cuisine, especially in Kerala, India.

Curry is typically made by sautéing onions, garlic, and spices in oil, to which boiled or roasted jackfruit seeds are added. When the seeds were soft and well coated with spices, the curry was ready. Other additions included tomatoes, coconut milk, or different spices to enhance the taste of the curry.

The seeds are nutty flavored and creamy textured when ripe; the last meal was rich and fragrant with the combination of different textures. The dish enjoys well with rice and Indian breads like roti or naan.

How to makeJackfruit seed curry:

1.  Clean seeds and put them in a pressure cooker, add ¼ tbsp. turmeric powder and 1 tbsp. salt.

2.  Heat oil in a kadai and add cumin seeds, onions and green chiles.

3.   Add fresh ground ginger garlic paste and curry leaves. Cut tomatoes into pieces and grind to make puree, add tomato puree and mix.

4.  Sprinkle turmeric powder, salt, red chili powder and coriander powder and mix.

6.  Drain boiled water from seeds and cut them into two halves.

7.  Put jackfruit seeds in the gravy and pour 1 glass of water and mix. Cook for 5 more minutes with lid covered so that seeds absorb spices.

Put sliced seeds in the gravy and pour little water.

8.  Open the lid and sprinkle garam masala powder and serve jackfruit seed curry hot with steamed rice or with chapati.

Pro-Tips to make a flavorful jackfruit seed curry:

Jackfruit seeds Should be mature, from ripe jackfruit, creamy white or pale yellow. Should not use in the unripe or green state, stiff and flavorless.

Preparation of seeds : Open the outer skin/white membrane of the seeds and let them remain with the brownish colour skin. You may boil or roast the seeds till it softened. Most common method is the boiling of seeds which will be well cooked.

Fry the spices: The primary flavor of the spices will always come by roasting or frying on low flame. In our case it starts from mixing oil to the pan and until they smell fragrant and golden brown.

Coconut milk or shredded coconut: Adding coconut milk will enhance texture of the gravy and when you add shredded coconut to the curry, it will enrich the taste and depth.

Simmering time: time added to the curry if jack fruit seeds are added, this time would be about 10-15 minutes or till the seeds become soft and absorb all flavors of spices from masalas. It is during this time that all the flavor and texture of the curry get obtained.

Tomatoes: Selectiong ripe tomatoes will not only bring sourness but also sweetness to the curry. Chop tomatoes until they are mushy and pulp, this will thicken the curry by giving right colour.

Spices include turmeric powder, red chilli powder, coriander powder, and garam masala. You may add spices according to your taste.

This finishing touch is giving the fresh coriander leaves to jackfruit seed curry. Oh, oh, oh, brilliant freshness of green colour coriander will surely give an excellent finishing to this dish.

Ingredients

  • Jackfruit seeds – 250 gms.
  • Turmeric powder – ¾ tbsp.
  • Salt – 2 tbsp.
  • Oil – 3-5 tbsp.
  • Cumin seeds – 1 tbsp.
  • Onions – ½ bowl
  • Green chilies – 4 No.
  • Fresh ginger garlic paste – 1 tbsp.
  • Curry leaves – 2 tbsp.
  • Tomatoes – 2 No.
  • Red chili powder – 1 tbsp.
  • Coriander powder – 1 tbsp.

Instructions

  1. Clean the seeds and place them in a pressure cooker with ¼ tablespoon turmeric powder and 1 tablespoon salt.
  2. In a kadai, heat the oil and add the cumin seeds, onions, and green chillies.
  3. Stir in the curry leaves and freshly ground ginger garlic paste. Cut tomatoes into bits and make them puree, then add tomato puree and stir.
  4. Combine the turmeric powder, salt, red chilli powder, and coriander powder.
  5. By this point (2 whistles), the jackfruit seeds are cooked. When they are checked, they can be squashed with finger pressure.
  6. Drain the cooked water from the seeds and cut them in half.
  7. Pour 1 glass of water over the jackfruit seeds and mix. Cook for 5 minutes more with the lid closed to allow the spices to soak.
  8. Remove the lid and sprinkle with garam masala powder before serving the jackfruit seed curry hot with steamed rice or chapati.
