Idli Podi Recipe Andhra Style
IdliPodi Recipe Andhra Style is a perfect blend of spices and lentils made by roasting on low flame and by adding the perfect ratio of lentils and spices.
Ingredients
- Oil – 1 tbsp.
- Urad dal – ½ cup
- Chana dal – ½ cup
- Dry red chillies – 12 No.
- Sesame seeds – ½ cup
- Jeera/ Cumin seeds – 1 tbsp.
- Hing/ Asafetida – ¼ tbsp.
- Curry leaves – 2 tbsp.
- Garlic cloves – 8 No.
- Salt – 1 tbsp. as per your taste
Instructions
- Heat oil in a kadai and put urad dal and chana dal in equal portions.
- Roast them on low flame till one can sense a nice aroma from them.
- Put them on another plate and let them cool. Add dry red chillies and roast them.
- To enhance the flavor add cumin seeds, asafetida, sesame seeds and curry leaves.
- Once they are roasted transfer to the plate and cool all spices.
- Put all spices in a mixer grinder and add salt (as per your taste) and garlic cloves.
- Grind all spices to a mild coarse powder. Serve Idli podi with soft idlis accompanied with ghee.

How to make idli podi recipe:
1. Add oil to a pan and add urad dal and chana dal. Fry on low flame for a while till they turn golden brown colour on low flame.
2. Transfer to another plate and spread to cool.
3. Add dry red chillies and roast for a second and transfer to plate.
4. Put sesame seeds, cumin seeds, asafetida and curry leaves.
5. Fry all ingredients and transfer to plate and let them cool.
6. Transfer all roasted spices to a mixer grinder and add garlic cloves and salt.
7. Grind to a soft paste and transfer to an air-tight container. Idli podi recipe tastes great when accompanied with hot idli and pure ghee.
