Grilled Mushrooms, Coal roasted mushrooms, Mushroom Tikka Recipe
Grilled Mushrooms or Coal roasted mushrooms are juicier and tasty vegetable recipe.
It is not that simple to cook mushrooms on charcoal as we all know that they have water more than meat. It is more important to keep moisture locked in it so that you get the juicy and yummy recipe.
In order to lock moisture, I have added olive oil during marination. Also, I tried to brush with olive oil. If you want you can dip in marinate gravy.
In order to add flavor, I have added garlic, thyme, basil and honey. There are different ways of cooking, if you have knowledge of proper cooking on charcoal then you can try my method or else you can wrap with aluminum foil before coal roasted mushroom.

Ingredients
- Button mushrooms - 250 gms.
- Onion - 1 big size
- Garlic - 10 gms. Chopped
- Thyme - 10 gms. Chopped
- Basil - 20 gms. Chopped
- White wine vinegar - 30 ml.
- Olive oil - 10 ml.
- Honey - 2 tbsp.
- Refined oil - 10 ml.
- Salt and pepper - as per taste
Parsley salsa:
- Onion - 1 medium size, chopped
- Parsley - 20 gms. Chopped
- Garlic - 10 gms. Chopped
- Salt and lemon juice - as per taste
Instructions
- How to Make Grilled Mushrooms or Coal roasted mushrooms:
- Mix all marinate ingredients except mushrooms and make a paste.
- Pierce mushrooms and marinate for the whole night.
- Put in seekh and cook on a charcoal fire for 5 - 10 minutes till cooked.
Tip: If you feel that grilled mushrooms are getting dry then you can brush with olive oil.
- Serve hot with parsley salsa sauce.
How to make Parsley Salsa Sauce
Mix all the ingredients of Parsley salsa.
Use this sauce with mushrooms.
