Gongura Chicken Recipe Andhra Style
Gongura Chicken Recipe is one of the popular Andhra special recipes especially served in Guntur and Vijayawada restaurants. It is one of the tangy and spicy recipes made by adding red sorrel leaves.
Ingredients
- Chicken – 1 ½ kg
- Gongura/ red sorrel leaves – 1 bowl
- Oil – 5 tbsp.
- Cinnamon sticks – 4 No.
- Cloves – 8 No.
- Green cardamoms – 4 No.
- Cumin seeds – ½ tbsp.
- Bay leaves – 2 No.
- Onions – 1 bowl
- Green chillies – 5 No.
- Ginger garlic paste – 2 tbsp.
- Tomatoes – 1 bowl
- Turmeric powder – ¾ tbsp.
- Kashmiri red chilli powder – 2 ½ tbsp.
- Salt – 2 ½ tbsp.
- Coriander powder – 1 tbsp.
Instructions
- In a thick bottom, aluminium vessel add little oil and put cinnamon sticks, green cardamoms, bay leaves, cloves and cumin seeds.
- Add sliced onions and saute for a while and add slit green chillies.
- Put ginger garlic paste and saute for a period. Add tomatoes and mix.
- Sprinkle red chilli powder, turmeric powder and salt as per taste and mix.
- Once tomatoes turn soft add chicken and cook for 10 minutes on low flame with lid covered.
- Meanwhile, slice red sorrel leaves and put them in semi-cooked chicken pieces.
- Mix well and cook for 10-15 minutes with lid covered till chicken completely cooks.
- At the end sprinkle coriander powder and serve gongura chicken recipe.

How to make Gongura Chicken Recipe:
1. Heat oil in a thick bottom vessel, add cinnamon sticks, cloves and green cardamoms.
2. Add cumin seeds, bay leaves, onions and saute for a while.
3. Put slit green chillies and add ginger garlic paste. Saute for a while till its raw flavour is cooked.
4. Add sliced tomatoes, turmeric powder, Kashmiri red chilli powder and salt. Mix well.
5. Cook for a while till tomatoes turn soft and then add cleaned chicken.
6. Mix and cook for 10 minutes with the lid covered till the chicken turns soft.
7. Add sliced red sorrel leaves after the chicken releases water and semi-cooked.
8. Mix and cook for 15 more minutes with the lid covered.
9. Sprinkle coriander powder over gongura chicken recipe, mix and serve hot.
