Tips to make a perfect Wheat rava upma recipe:
Select the Right Variety of Wheat Rava: Wheat rava, popularly known as broken wheat or dalia, is available in various textures-from very fine to very coarse. Medium to coarse or coarse wheat rava is acceptable to make Wheat rava upma because it provides fluffy and clear texture rather than becoming mushy.
Dry roast the wheat rava before cooking so it gets nutty aroma and cooks well. Roast it in medium flame by stirring in between so it does not get burnt; it should get lightly golden. It also avoids lumps and keeps upma fluffy.
Ingredients Preparation Advance
The wheat rava upma recipe cooks real quick, so you best chop all your ingredients together before you start. The usual ingredients are onions, green chilies, ginger, curry leaves, carrots, peas, and green bell peppers.
Use the Right Water Ratio
In general, 2 cups of water for 1 cup of wheat rava does the trick to yield the fluffy texture. Adjust the water a little according to the coarseness of the rava. Fine rava needs less water, coarse rava may require a bit more.
Tempering with Flavour
Tempering (tadka) is what makes upma flavorful. Heat oil or ghee, add the mustard seeds, cumin seeds, chana dal, and urad dal. Fry until golden brown. Add curry leaves, green chilies, and ginger. This infuses into the oil a warm aromatic flavor which goes well with the wheat rava.
Add vegetables for extra flavor and nutrition.
Add the sautéed vegetables chopped carrots, green beans, peas or bell peppers to it; adds nutrition and texture. Let the vegetables become tender then add the water.
Boil the water, separately in another vessel before adding.
Put it to a boil separately in a different pan and mix it to the pan as well. Season the water with a pinch of turmeric in case you require color added to it for presentation as well as adding salt as usual. If you are adding boiling water at once then the wheat rava upma recipe can cook faster more evenly
Start adding wheat rava a little to the boiling water
Slowly pour the roasted wheat rava into the boiling water while stirring constantly. This prevents lumps forming and helps it to distribute evenly. After you add all the rava, lower the heat.
Put the lid on and Simmer on Low Heat
Once you add the rava, cover the pan and let it simmer on low heat for 5-10 minutes, depending on the rava’s texture. This will make the wheat rava upma recipe absorb all the water and turn soft without sticking.
Let it Rest and Fluff with a Fork
After cooking off the heat, put a lid on it and let the upma rest for some few minutes. Then fluff open using your fork so grains shall not stick together.
Serve with Fresh Herbs and Lemon Juice
Garnish with chopped fresh coriander leaves and a splash of lemon juice to give it a bright and fresh flavor. This makes the dish more elevated with its flavor profile and will balance the earthy wheat rava.
Serve with Accompaniments
Wheat rava upma recipe is served best with coconut chutney, a dollop of yogurt, or a side of pickle. These side dishes bring a bit of tang and creaminess into the savory flavors of the upma.
