At the times of high price for goat meat (mutton) people started to have head meat. Usually Goat head doesn’t have much meat but its brain tastes great. With thin meat on the head, even 1 cm. meat tastes great when perfectly cooked.
When cooked with spices and pressure cooked for 20 minutes, minerals from bones get extracted and have a great taste.
Tips to make a perfect goat head curry:
- Usually, a goat head needs to be burned and then cleaned properly.
- In a few areas after burning the head, people apply turmeric powder to disinfect.
- Usually, goat head curry tastes good when it’s spicy so we are adding 2 tbsp. red chilli powder along with green chillies.
- If we are cooking a small head, they cook easily but if they are aged, they sometimes take time to cook.
- Even after pressure cook for 20 minutes sometimes they do not cook, check the piece and then add water as per the availability in gravy and cook further.

Ingredients
- Goat Head – 1 kg.
- Onion pieces – 1 bowl
- Tomatoes – 1 bowl
- Cinnamon sticks – 4 No.
- Cloves – 10 No.
- Green cardamoms – 4 No.
- Turmeric powder – ¼ tbsp.
- Salt – 2 tbsp.
- Red chilli powder – 2 tbsp.
- Green chillies – 5 No.
- Ginger garlic paste – 2 tbsp.
- Coriander leaves – 2 tbsp.
- Mint leaves – 2 tbsp.
- Oil – 4 tbsp.
- Water – 2 glass full 500 ml
- Black pepper grains – 1 tbsp.
- Coriander seeds – 4 tbsp.
- Dry coconut pieces – ¼ cup.
- Bay leaves – 2 No.
Instructions
- Put cleaned goat head and leg pieces in a pressure cooker.
- Add onions, tomatoes, green cardamoms, cloves, cinnamon sticks, red chilli powder, green chillies, turmeric powder and salt.
- Put ginger garlic paste, coriander leaves, mint leaves, little oil and mix all ingredients.
- Add 2 glass full water and pressure cook for 15-20 minutes on medium flame.
- Let the pressure cooker cool, open the lid and check the mutton piece, if it’s soft then it’s cooked or else check water levels and add if necessary and cook further.
- To elevate the flavour lets dry roast coriander seeds and whole black peppercorns.
- In a mixer grinder add dry coconut powder and above spices and ground to powder.
- Heat oil in a pan and add finely sliced onions, ginger garlic paste and bay leaves.
- Sauté for while and put pour cooked meat and mix.
- Add coconut powder and mix. If you feel the liquid gravy is more then cook for a minute on high flame till you get a thick gravy.
Garnish coriander leaves over goat head curry and serve hot.

How to make Goat Head Curry:
1. Clean and put Goat headpieces in a pressure cooker.
2. Add ½ bowl onion pieces, tomatoes, cinnamon sticks and cloves.
3. Put green cardamoms, turmeric powder, salt and red chilli powder.
4. Add slit green chillies, 1 tbsp. ginger garlic paste, 2 tbsp. coriander leaves and mint leaves.
5. Put 2 tbsp. oil and mix all ingredients. Add 2 glass full of water and close the lid. Cook for 20 minutes on medium flame.
6. Open the lid when cooled, check the mutton piece whether it is cooked or not.
7. Roast black pepper grains and coriander seeds on medium flame and transfer to another plate to cool.
8. In a blender add dry coconut pieces and above roasted spices and grind to a soft powder.
9. Add 2 tbsp. oil and add sliced onions, bay leaves and ginger garlic paste.
10. Saute ginger garlic paste for a while and put above pressure cooked Telakaya kura.
11. Put coconut spice powder and gently mix and cook for a minute without a lid on high flame.
12. Garnish goat head curry with coriander leaves and serve hot.
