Tips to make a perfect Chana Dal Namkeen Recipe:
- Most of the time chana dal remains hard after deep frying because they do not get soaked properly.
- We need to soak the dal for 6-8 hours so that it swells properly and remains soft from the inside.
- While soaking the dal when you add baking soda, will help dal to remain soft and crunchy, or else they may turn hard based on the quality of the dal.
- When deep frying dal, dry them properly under the fan, or else this recipe absorbs more oil and sometimes you may even see oil foam and come out of the pan.
- Choose deep Kadai to fry and make use of steel net ladder. When you find oil foam coming out of the pan, lift the lader.
- Lift the steel net lader with a time interval so that dal does not get split.
- Always store the Fried Chana dal Recipe in an air-tight container. If needed take a small quantity of dal in another small jar for regular use.
- Moisture reduces shelf life and dal loses its crispy texture.

Ingredients
- Chana dal – 1 bowl
- Salt – 3 tbsp.
- Water – to soak.
- Red chilli powder – 1 tbsp.
- Turmeric powder – a pinch
- Chat masala – 1 tbsp.
- Coriander powder – ½ tbsp.
- Garam masala powder – ½ tbsp.
- Rock salt – ½ tbsp.
- Kashmiri red chilli powder – ¼ tbsp.
Instructions
- In a mixing bowl, add chana dal, adequate water, baking soda and mix.
- Soak dal for 5-8 hours or overnight so that we get a soft and crispy texture after deep-fried.
- Once soaked, discard saltwater and transfer dal over a clean cloth and let them dry.
- If you hurry we can even place the above cloth under a fan and dry it.
- Meanwhile, heat oil and bring it to optimum temperature and maintain flame at medium.
- Place steel net lader in oil and put chana dal in small batches.
- Adding dal in small batches helps us to regulate oil foam, if needed raise lader from oil and dip again.
- Deep fry dal till foam disappears and chana dal turns crisp and gives cracking sound when lader is shaken.
- Drain excess oil and transfer chana dal namkeen recipe over a kitchen towel.

- In a small mixing bowl add coriander powder, garam masala powder, chat masala powder, iodine salt, rock salt and Kashmiri red chilli powder.

How to make chana dal namkeen recipe:
1. Put chana dal in a mixing bowl and clean dal. Sprinkle salt, water to soak and mix well. Soak for 5 hours.
2. Pour chana dal soaked water through a skillet and discard soaked water.
3. Put dal over a cloth and spread to dry. It’s a good idea to place a towel under a fan to dry.
4. Heat oil in a pan and place steel net lader and put chana dal in it.
5. Deep fry dal on medium flame till they turn a golden brown color.
6. Once deep-fried, bubbling stops and when we shake dal one can hear a crackling sound.
7. Put chana dal over a kitchen towel so that excess oil gets absorbed.
Making spice powder to spice up chana dal namkeen recipe:
8. In a mixing bowl add salt, red chilli powder, turmeric powder and chat masala powder.
9. Add coriander powder, garam masala powder, rock salt and mix all ingredients.
10. Put ¾ tbsp. above spice powder over chana dal and sprinkle little Kashmiri red chilli powder.
11. Mix all ingredients and serve the chana dal namkeen recipe accompanied with a cup of tea.
