Best Fish Masala Curry Recipe Indian Style

Usually, the fish recipe is flavoured either by adding tamarind or tomato to give sourness apart from spices. In our recipe onions, tomato and red chilli are made to paste to make gravy.
Every time we bring fish home, we like to make different styles out of them either the fry version or the gravy version of them.
There are many versions of making Fish Masala Curry, our version sticks to Andhra style who love to eat freshwater fish.
My grandma used to say that fish which has fewer thrones might be easy to eat but the one which has more thrones is difficult but has great taste as its meat will be very soft.
TIPS to make Fish Masala Curry:
- Tell the butcher to slice fish pieces to a minimum of 1.5 to 2-inch thick pieces for the curry. If you are going to make fry then we can go for thin pieces.
- Clean meat with water and remove the strains of blood and if possible sanitize with salt and turmeric powder.
- We have added red chilli powder while marinating so adjust the green chillies in the curry.
- The meat absorbs spices when we marinate for 30 minutes, we can even fry them directly without marinating if you do not have time.
- Usually fish tend to split while mixing with gravy so it’s a good idea to fry them.
- Based on the thickness of Fish Masala Curry you wish to make, add an adequate quantity of water.

Ingredients
- Fish – 500 gms.
- Turmeric powder – ¾ tbsp.
- Red chilli powder – 1 tbsp.
- Salt – 1½ tbsp.
- Ginger garlic paste – 1 tbsp.
- Onions – 1 bowl 2 medium sizes
- Green chillies – 6 No.
- Tomatoes – 1 bowl 3 medium sizes
- Coriander seeds – 1 tbsp.
- Black peppercorns – ½ tbsp.
- Cloves – 4 No.
- Green cardamoms – 2 No.
- Dry coconut – ½ cup
- Oil – 5 tbsp.
- Ginger garlic paste – 1 tbsp.
- Mint – 1 tbsp.
- Coriander leaves – 2 tbsp.
- Water – 200 ml.
Instructions
- Cut fish into medium size and clean them with turmeric and salt. Transfer to another bowl.
- Add little turmeric powder, ginger garlic paste, red chilli powder and salt.
- Coat this mixture to fish pieces and keep aside to marinate.
- Let us prepare gravy, add onions, tomatoes and green chillies in a mixer grinder and make a soft paste.
- Dry roast coriander seeds, green cardamoms, black pepper, dry coconut and cloves.
- Once we smell the aroma, transfer to a plate and let them cool.
- Meanwhile, add little oil in a pan and fry fish till we get mild colour. Transfer to another plate.
- Once spices are cooled, grind them to soft powder, keep aside.
- Add little more oil in excess to oil remains in a pan. Add tomato-onion puree, little turmeric powder and salt as per your taste.
- Add ginger-garlic paste, red chilli powder and lower the flame and mix well. Cook for a minute.
- Put coconut spice powder and mix. Add fish and cover the pan with a lid and cook further for a minute.
- Add little water and cook for a minute and garnish Fish masala curry with coriander and mint leaves.

How to make Fish Masala Curry:
1. Clean fish with fresh water and drain excess water. Add ¼ tbsp. turmeric powder, ½ tbsp. red chilli powder, ½ tbsp. salt and 1 tbsp. ginger-garlic paste.
2. Mix all ingredients and place a lid and keep aside to marinate for 30 minutes. This will help fish pieces absorb spices and enhances the flavour of our Fish Masala Curry recipe.
3. In a mixer grinder bowl add onions, green chillies and tomatoes. Grind to a soft paste and keep aside.
4. In a pan add coriander seeds, black peppercorns, cloves and green cardamoms and dry roast for a second.
5. Add dry coconut pieces and roast for a while and transfer to another plate and keep aside to cool.
6. In a pan add 3-4 tbsp. Oil and fry marinated fish for a minute or two so that they do not get spread when added to the gravy and give us enhanced flavour.
7. Once fried to a light golden colour, gently transfer to another place. Make sure they do not break while transferring to the plate.
8. Once spices are cooled, transfer them to a mixer grinder and make a fine powder.
9. After frying fish, in the leftover oil, add some more oil and add onion-tomato puree, ½ tbsp. turmeric powder and 1 tbsp. salt.
10. Add ½ tbsp. red chilli powder and cook for 10 minutes on low flame till we get a thick gravy.
11. Put ginger garlic paste, coconut powder, fried fish and gently mix and cook for a minute with the lid covered.
12. Open the lid and put a little water, gently mix it with fish so that they do not spread and cook for a minute.
13. Garnish Fish Masala Curry with mint leaves and coriander leaves and serve hot.
