Egg Kurma Recipe is one of the South Indian recipes blended with spices and gravy. It can be considered as one of the side dishes which goes well with biryani, pulao or even chapatti.
Ingredients
- Eggs – 6 No.
- Cinnamon sticks – 3 No.
- Cloves – 4 No.
- Green cardamoms – 2 No.
- Dry coconut – ½ cup
- Groundnuts – 2 tbsp.
- Cashew nuts – 3 tbsp.
- Oil – 3 tbsp.
- Turmeric powder – ¼ tbsp.
- Salt – 1 tbsp.
- Red chilli powder – 1 tbsp.
- Onions – 1 cup 1 No. large size
- Green chillies – 4 No.
- Cumin seeds/ Jeera – ½ tbsp.
- Curry leaves – 2 tbsp.
- Ginger garlic paste – 1 tbsp.
- Coriander powder – 1 tbsp.
- Curd – 1 cup
- Water – 1 glass 250 ml.
Instructions
- Spices make difference in this recipe adding a perfect blend of spices will make this recipe most flavored.
- In a pan, dry roast cinnamon sticks, dry coconut pieces, cloves, groundnuts, green cardamom and cashew.
- Once one feels the aroma of spices, transfer to another plate and let them cool.
- In a pan add 3 tbsp. oil to roast boiled eggs. To spice up eggs, sprinkle eggs, red chilli powder, turmeric powder and salt.
- Make an incision on eggs and roast them in oil for a minute and put them in another bowl.
- Onions play important role in making gravy. So put onions and green chillies in a mixer grinder to make a soft paste.
- In leftover oil in a pan, add cumin seeds and curry leaves.
- Add onion paste and ginger-garlic paste, sauté for a while and cook till its raw flavor is cooked.
- Now let’s prepare spice paste with roasted ingredients.
- Put all roasted spices in a mixer grinder and make a coarse powder. Add little water to make a soft paste.
- Add this paste to the onion mix and sprinkle a little salt, red chilli powder, turmeric powder, curd and coriander powder.
- Put little water and mix well. Put eggs and cook for 10 minutes covered with a lid.
- Once the gravy thickens, off the flame and serve Egg Kurma Recipe with biryani or chapatti.

How to Make Egg Kurma Recipe:
1. Dry roast cinnamon sticks, cloves, green cardamoms and dry coconut pieces.
2. Add groundnuts and cashew nuts. Roast for a while and transfer to another plate. Keep aside to cool.
3. Heat oil in a pan and add a pinch of turmeric powder, salt and red chilli powder. Mix well.
4. Boil eggs, remove its shell. Using a fork or a knife, make incisions over eggs and put them in oil. Fry for a minute and transfer to another bowl.
5. In a mixer grinder add onions and green chillies. Grind to a soft paste.
6. Put jeera and curry leaves in leftover oil in the pan. Saute for a while.
7. Add onion paste and sauté for a while. Add ginger-garlic paste and stir till its raw flavor is cooked.
8. By this time dry roasted spices might have cooled, transfer them to a mixer grinder and make soft-paste by adding little water.
9. Put this paste and mix well. Add ¼ tbsp. turmeric powder and salt.
10. Add red chilli powder, coriander powder, curd and 1 glass water (or mixer grinder cleaned water) and mix well.
11. Put eggs, mix and cook for 10 minutes with lid covered so that the gravy for Egg Kurma Recipe thickens.
