Best Egg Drumstick Curry Recipe | Kodi Guddu Mulakkaya Kura
Egg Drumstick Curry or Kodi Guddu Mulakkaya Kura is one of the authentic curry recipes of Andhra. I always like to add eggs when we make Mulakkaya Kura.
In South India, people also like to add potatoes and brinjal apart from basic ingredients tomatoes and onions. Sometimes I like to add drumsticks while preparing the chicken curry.
This version is a simple and healthy nutritious recipe that can be made with fewer ingredients. Usually, thick and tender drumsticks taste great while making this recipe.
While making Kodi Guddu Mulakkaya Kura, one should take care of cooking drumsticks as they get split soon. Few people like to cook drumsticks separately and add them to the curry and cook for a minute or two and remove them from the flame.
Tips to Make Perfect Egg Drumstick Curry Recipe:
Boil eggs perfectly: Boil your hard eggs for just done, around 8-10 minutes. It is bad to overcook, the result would be rubbery. Peel them and leave them aside.
Fresh drumsticks: Use fresh tender drumsticks. Moringa pods are mainly called drumsticks. Clean and chop them into 3-4 inches of length. More tender the drumsticks are, the quicker they will get cooked and the flavor is better.
Fry the boiled eggs lightly: Fry the boiled eggs in a little oil with a pinch of turmeric and chili powder. This helps to give a slight crust to the eggs and adds flavor.
Make flavorful base: Sauté onions, tomatoes, ginger, garlic, and spices well together. The masala makes the curry flavorful. Take your time to prepare it properly.
Coconut milk or paste: It imparts the curry a South Indian rich, creamy texture. It also balances the spices.
Spice balance: Subtlety of Cumin, coriander with turmeric and garam masala goes a long way. Set the heat level according to your requirement by decreasing more chili powder or increasing less green chilies added.
Simmer drumsticks well: The drumsticks should be simmered till soft. This should preferably be done before putting eggs in them, so they can absorb the flavors of gravies.
Add eggs last: The boiled eggs to be added towards the end should not be overdone. Simmer slowly for some time to let eggs absorb the curry flavor.
Garnish with coriander: Garnish it with fresh coriander leaves for more freshness and fragrance.

Egg Drumstick Curry or Kodi Guddu Mulakkaya Kura is one of the authentic curry recipes of Andhra. I always like to add eggs when we make Mulakkaya Kura.
Ingredients
- 3 No. Drumsticks Whole
- 4 No. Eggs
- 3 tbsp. Oil
- 1 bowl Onions
- 1 tbsp. Ginger garlic paste
- 2 tbsp. Curry leaves
- ½ tbsp. Turmeric powder
- 1¼ tbsp. Salt
- ¾ large bowl Tomatoes
- 1½ tbsp. Red chilli powder
- Water – required
- ½ tbsp. Garam masala powder
Instructions
- In a pan, heat oil and add cumin seeds and mustard seeds.
- Once mustard seeds start to splutter add onions.
- When onions turn translucent, add ginger garlic paste and sauté till its raw flavour is cooked.
- Add curry leaves and drum sticks, mix well.
- Sprinkle salt and turmeric powder, tomato slices and place a lid and cook for 5 minutes.
- Boil eggs in another vessel by adding little salt so that an egg doesn’t get cracked.
- Remove the shell and pierce eggs using a fork so that they absorb spices.
- Open the lid and sprinkle red chilli powder, add eggs and little water.
- Cook further for a minute or two with lid covered.
- Ser Serve Egg Drumstick Curry or Kodi Guddu Mulakkaya Kura with chapatti or with plain rice.

How to Make Egg Drumstick Curry:
- Heat oil in a pan and add mustard seeds, cumin seeds and onions.
- Add ginger-garlic paste and sauté till its raw flavour is cooked.
- Put a few strands of curry leaves and mix.
- Cut drumsticks into small pieces and add them.
- Sprinkle turmeric powder and salt and mix well.
- Add tomatoes and mix, cook for 5 minutes with the lid covered.
- Meanwhile, put eggs in a vessel and pour a little water so that the eggs are submerged, boil for 5 minutes.
Tip: Adding a few pieces of lemon or salt will keep eggs intact without getting any cracks during the boiling process.
- Sprinkle red chilli powder and mix well.
- By this time, eggs get boiled, remove the shell and pierce eggs with a fork so that eggs absorb spices.
- Add these eggs to the drumstick mixture and mix gently.
- Pour a glass full of water (approx. 250 ml.) and cook for 2 minutes with the lid covered.
- Sprinkle garam masala powder when you get thick gravy and mix well.
- Serve Egg Drumstick Curry on a plate, this recipe goes well with plain rice.
