This recipe is made with 3-year-old basmati rice which not only absorbs the flavours of the spices we have used but also yields good quantity and non-sticky rice. Always choose extra-long, old and aroma filled rice.

Our version of the Anda Biryani Recipe is made by adding onions directly, we can even deep fry onion pieces to golden brown colour and add them when rice is half cooked to enhance flavour.
Here are some tips to make a delicious and flavorful egg biryani:
- Use good quality eggs: Choose fresh and good quality eggs to make the biryani. Hard-boil the eggs and slice them into halves or quarters before adding them to the biryani.
- Use aromatic biryani spices: Use a blend of aromatic spices like cumin, coriander, cardamom, cloves, cinnamon, and bay leaves to create a flavorful and fragrant biryani.
- Fry the onions: Fry the onions until they are golden brown and crispy. This adds a delicious crunch and flavor to the biryani.
- Use basmati rice: Use high-quality basmati rice and soak it for at least 30 minutes before cooking to ensure that it cooks evenly.

Ingredients
- 4 No. Eggs
- 2 cups Basmati Rice
- Water – required
- 6 tbsp. Oil
- 7 No. Cinnamon sticks
- 13 No. Cloves
- ½ tbsp. Sayajeera
- 4 No. Bay leaves
- 1 No. Star anise
- 6 No. Green cardamoms
- 9 No. Green chillies
- 1¾ tbsp. Salt
- 1½ tbsp. Ginger garlic paste
- 1 cup Coriander leaves
- 1 cup Mint leaves
- ½ tbsp. Turmeric powder
- ½ tbsp. Red chilli powder
- 1 tbsp. Coriander powder
- 1¼ tbsp. Garam masala powder
- 1 cup Curd
Instructions
- Boil eggs by adding adequate water and a little salt for 5 minutes.
- On another side, clean basmati rice and soak for 20 minutes by adding 2 cups of water for each cup of rice.
- While eggs and rice are being cooked let us prepare spices.
- In a pan heat oil and add sayajeera, cardamoms, cinnamon sticks, bay leaf, cloves and star anise.
- Add onions, green chillies and a little salt. Sauté for a while till onions turn translucent.
- Put ginger garlic paste, sauté till the raw flavour is cooked.
- Add cashew, mint leaves and coriander leaves and cook for a minute.
- Sprinkle red chilli powder, coriander powder, turmeric powder, salt, garam masala powder, curd and mix well.
- Add soaked rice along with water and cook for 10 minutes on low temperature with lid covered.
- While rice is being cooked, let us prepare eggs, remove shells and pierce them with a knife.
- In a pan, heat oil and put eggs, cook on low flame.
- Sprinkle spice powders for extra flavour. Put turmeric powder, salt, garam masala and little coriander powder. Fry till outer layer turns golden brown.
- At this point of time, we can either slice them into pieces or put them as it is.
- By this time, the rice should have cooked 75 percent. Add eggs and cook till rice is cooked so that eggs absorb all the spices.
- Garnish Egg Biryani Recipe or Anda Biryani with coriander leaves and serve hot.

How to Make Egg Briyani Recipe:
- Gently put eggs in a vessel and pour 2 glass water, boil for 5 minutes.
Tip: Adding a pinch of salt will make eggs not to crack during the boiling process.
Preparing rice for Egg Biryani Recipe:
- In a bowl, add two cups of rice and pour adequate water. Clean rice and keep aside.
- Add two bowls of water for every one bowl of rice.
Note: If you are soaking rice for 20-30 min before cooking, then 1 ½ bowl of water is enough (based on the age of the rice).
Preparing Masala base for egg biryani recipe:
- Heat oil in a pan and add cinnamon sticks, cloves and sayajeera.
- Continue adding bay leaf, star anise and green cardamoms and sauté for a while.
- Add green chillies and onions and sauté till turn soft.
Tip: Adding a ¼ tbsp. salt while frying onions will make them soft without getting burnt.
Note: We can even deep fry onions to golden brown colour and add them to rice.
- Add ginger-garlic paste and sauté till its raw flavour is cooked.
- Put a generic amount of cashew for additional flavour to Egg Biryani Recipe.
- Put fist full coriander and mint leaves and sauté for a while.
Tip: Coriander and mint leaves enhance the flavour of the recipe.
- Sprinkle turmeric powder, red chilli powder, coriander powder and garam masala powder.
- Add salt and curd and mix well.
- Put soaked rice, water and cook for 10 minutes with lid covered.
Tip: Cook rice on a low temperature, do not stir rice while it’s being cooked, as rice may break.
Preparing Eggs for Anda Biryani Recipe:
- In a pan, add little oil while it’s being heated up, pierce eggs with a sharp knife and sprinkle little turmeric powder.
- Sprinkle a pinch of salt, coriander powder, garam masala powder and roast it till its skin turns a golden brown colour.
- Remove the lid of the rice, add roasted eggs in basmati rice and cover rice over eggs and cook further till rice is cooked.
- Garnish Anda Biryani Recipe or Egg Biryani Recipe with coriander leaves and serve hot.
