Egg Bhurji Recipe | Anda Bhurji | Egg Porutu is one of the spicy and flavoured versions of scrambled eggs from North India.
Many people are addicted to street-side food because of the style they use to make recipes or the spices they use to enhance their taste.
Our version of the recipe reminds of street-side food as we have used a mix of spices except for pav bhaji masala. Many of us use garam masala powder to give a punch of spiciness but I have replaced it with pav bhaji powder.
Many of us love making this recipe at home not because it’s tasty but easy to make with easily available ingredients.
Even branded spice makers are selling their products in a small pack of Rs.5 to attract customers. So we can also buy them and add it to our recipe to increase the flavor.
When it comes to street-side food, they tend to add MSG or tasting salt, it’s up to you. I have avoided tasting salt as it’s not good for my health.
Based on the requirement we can adjust the juiciness of this recipe. If you are eating with bread recipes like chapatti, paratha or naan we need to cook till eggs are fried. If we eat with plain rice then it’s a good idea to make it juicy by adding little water.
Is egg bhurji healthy?
Thus, if done correctly, egg bhurji recipe can even be a healthy meal. The quantities of protein in eggs are high, and they are also good sources of vitamins and healthy fats. When these are cooked in minimal amounts of oil with the presence of some vegetables like onions, tomatoes, and spinach, it is an excellent meal. But when too much oil and butter are used or when it’s prepared along with not-so-healthy side dishes, it’s not that healthy. Add to that the spices used in egg bhurji recipe, which consist of turmeric and cumin-these add a myriad of health benefits. So this one’s a good option when balanced by healthy ingredients and moderated fats.
TIPS to make the perfect Egg Bhurji Recipe:
- To enhance the flavor of the recipe we have used garam masala powder. If we use pav bhaji spice powder then we get street side flavor.
- Instead of coriander leaves, we can also use curry leaves, which will enhance the aroma.
- If you are not fond of adding tomatoes to this recipe we can add lemon juice at the end of this recipe.
- Different flavor you like to add cooking time varies. If you like to have well-cooked and fried, cook for a long time. If you want a juicy one, then cook based on your liked texture.

Egg BhurjiRecipe or Anda Bhurji is one of the spicy and flavoured versions of scrambled eggs from North India.
Ingredients
- Eggs – 5 No.
- Oil – 6 tbsp.
- Onions – 1 bowl
- Green chillies – 2 tbsp.
- Salt – 2 tbsp.
- Turmeric powder – ¾ tbsp.
- Ginger garlic paste – 1 tbsp.
- Tomatoes – 1 bowl
- Coriander leaves – ½ bowl
- Red chilli powder – ½ tbsp.
- Coriander powder – ½ tbsp.
- Garam Masala powder – ½ tbsp.
Instructions
- Usually, Onions add flavour to our recipe so add a generous quantity of them by slicing into small pieces.
- In a pan heat oil and add onions and green chillies. Saute for a while.
- Sprinkle turmeric powder and salt and cook onions till they become soft.
- Add ginger-garlic paste and cook till its raw flavour is cooked.
- Put tomatoes slices and coriander leaves and cook further with lid covered till they turn soft.
Add coriander and turmeric powder, mix well.
- Meanwhile, beat eggs to turn creamy texture and add them to the tomato mix.
- Adjust temperature to medium to high and stir continuously till you get hard scrambles of an egg.
- Once egg scramble turn temperature to low to medium so that eggs get cooked well.
- When eggs are cooked, sprinkle garam masala or pav bhaji spice powder and mix well.
- Usually, when we add masala powder we need to check the taste and adjust chilli powder or salt as per your taste.
- If everything is good, garnish Egg Bhurji Recipe or Anda Bhurji with coriander leaves and Serve hot.

How to make Egg Bhurji Recipe:
1. Heat oil in a pan and add finely sliced onions and mix.
2. Add finely sliced green chillies and sauté for a second.
3. Sprinkle salt and turmeric powder, sauté till onions turn their colour.
4. Put ginger garlic paste and sauté till its raw flavour is cooked.
5. Add tomatoes and coriander leaves, mix well and cook further with lid covered.
6. In a separate bowl, break eggs and beat them using a fork till you get froth.
7. After two minutes of cooking, open the lid by this time tomatoes turn soft.
8. Sprinkle red chilli powder and coriander powder, mix well.
9. Pour egg beat and stir continuously so that eggs start scrambling.
10. Cook egg bhurji on medium heat so that they are cooked from the inside by leaving a juicy flavour.
Note: If we don’t stir occasionally, then eggs start sticking to the bottom and gradually burn.
11. When eggs are cooked, sprinkle garam masala powder and mix well.
Note: Taste a piece of egg to analyze salt and spiciness. If needed add them as per your taste.
