Ingredients

Measurement: 1 cup=200 gms.

  • Moong dal – 1 cup
  • Rice – 2 cups
  • Water – 5 cups
  • Oil – 2 large spoons 5 tbsp.
  • Cinnamon sticks – 4 No.
  • Cloves – 4 No.
  • Green cardamoms – 2 No. crushed
  • Star anise – 1 No.
  • Bay leaf – 2 No.
  • Cumin seeds/ jeera – ½ tbsp.
  • Onions – 1 cup
  • Green chillies – 4 No.
  • Ginger garlic paste – 1 tbsp.
  • Carrots – ½ cup
  • Potatoes – ½ cup
  • Tomatoes – 1 cup
  • Mint leaves – ¼ cup
  • Coriander leaves – ¼ cup
  • Turmeric powder – ¼ tbsp.
  • Salt – 1 ½ tbsp.
  • Black pepper powder/ whole grains – ¼ tbsp.

Instructions

  1. Clean and soak rice and moong dal for 10 minutes by adding 5 cups of water.
  2. Take a thick bottom vessel or pressure cooker and heat little oil in it.
  3. Fry green cardamoms, star anise, cinnamon sticks, bay leaf, green cardamom and cumin seeds.
  4. Add onions and green chillies and cook for a minute and add ginger garlic paste.
  5. Based on your interest add vegetables. In our recipe, we have added thin slices of carrot and potatoes.
  6. Cook for a while with lid covered and then add sliced tomatoes.
  7. Add mint and coriander leaves. Sprinkle salt, turmeric powder, black pepper powder. Mix all ingredients.
  8. Add water from soaked rice and bring it to boil on high flame and then add rice and moon dal mix.
  9. Lower the flame and add rice and moong dal. Cook for 15-20 minutes till they turn dry.
  10. As our version is Dum Moong Dal kitchidi, we add limited water and cook to turn dry but rice grains are softer than normal steam rice.

1.  Add moong dal and rice to a bowl and clean them. Add 5 cups of water and soak for 10 minutes.

2.  Heat oil in a thick bottom vessel and add cinnamon sticks, cloves and green cardamoms.

6.  Slice carrots and potatoes into small pieces and add them into this mix and cook for a minute with lid covered.

7.  Put finely sliced tomatoes, mint leaves and coriander leaves. Mix.

9.  Pour water used for soaking dal and rice, mix all ingredients and bring it to boil with lid covered on high flame.
