Dal Tadka Recipe, How to Make Dal Tadka Recipe Dhaba Style

Ingredients
- 2 cups Toor dal
- Water – required quantity
- 1¼ tbsp. Turmeric powder
- 1 tbsp. Oil
- 2 tbsp. Ghee
- 2 tbsp. Garlic finely sliced
- 1 tbsp. Ginger finely sliced
- 2 tbsp. Curry leaves
- ½ Large bowl Onions
- 2 tbsp. Green chillies
- 1¾ tbsp. Salt
- 1 Large bowl Tomatoes
- 1 tbsp. Red chilli powder
- 1 tbsp. Coriander powder
- ¾ tbsp. Garam masala powder
- ½ tbsp. Mustard seeds
- ½ tbsp. Cumin seeds
- 4 No. Dry red chillies
- Asafetida – a pinch
Instructions
- Wash Toor dal and transfer to the pressure cooker.
- Put 1 tbsp. oil, little turmeric powder and 500 ml. water. Usually, we add 2 cups of water for 1 cup dal.
- Cook dal on medium heat for 3 whistle blows so that dal becomes soft.
- While dal is being cooked, let us prepare spice mixture.
- Put ghee in a pan, when it melts add finely sliced ginger, garlic, green chillies, onions, a little salt and curry leaves.
- Add sliced tomatoes and cook open or closed with a lid till they turn soft.
- Sprinkle salt, turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well.
- By this time, dal might be ready to add into the spice mix.
- Before adding dal check dal whether it is cooked well or not, if not mash dal to make it soft.
- Add dal to onion-tomato mixture and cook at low temperature.
Tip: Check the taste of the dal, if needed add a little salt as per your taste.
- While toor dal is being cooked, let us prepare tadka or temper.
- Add ghee in a pan, when it melts add cumin seeds, mustard seeds, curry leaves, dry red chillies and asafetida powder.
- Mix all ingredients and pour temper to dal and mix well.
- Dal Tadka Recipe Dhaba Style is ready, garnish with coriander leaves.

How to Make Dal Tadka Recipe Dhaba Style:
- Wash Toor dal and put it in a pressure cooker.
- Add ¼ tbsp. Turmeric powder, 1 tbsp. oil and 2 glasses of full water (500 ml.) and pressure cook dal for 3 whistle blows.
Tip: Adding a little oil and turmeric powder will help dal cook faster.
- Heat ghee in a kadai and add finely sliced ginger and garlic pieces and sauté for a while.
- Add curry leaves, onions, green chillies and ¼ tbsp. salt.
Tip: Adding salt while frying onions will help cook onions easily.
- Cook for a minute or two with the lid covered till the onions turn soft.
- Add tomato pieces and cook further for a minute covered with a lid.
- Sprinkle turmeric powder, salt, red chilli powder and coriander powder.
- Open the lid of the pressure cooker and check for the dal, if it’s cooked then it’s well and good else mash the dal to fine.
- Add garam masala powder and mix well.
- Pour mashed dal and mix well.
- Sprinkle ½ tbsp. salt and cook at low temperature.
- Heat ghee in a pan, add mustard seeds, cumin seeds and dry red chillies.
- Add curry leaves and asafetida and mix well.
- Pour tempered ingredients into the dal while it’s hot and mix.
- Garnish Dal Tadka Recipe with coriander leaves and serve hot with white rice.
