Coriander rice recipe | Kothimeera Rice Recipe made with fresh Indian cilantro is one of the healthy and delicious rice dishes. Learn how to make a coriander rice recipe with step by step image instructions along with tips and a video.
Fresh leaves are ground by adding green chilies, onions and garlic cloves. This paste is then sauteed in ghee to give a rich aroma and flavor. We can even add cauliflower, green peas and carrots to make it a rich and healthy recipe.
We can make this recipe in two ways either the way I have shown or in pulao style. In another style, we put green paste, veggies and spices and then add water and rice. Close the lid and cook for 3 whistles like one pot recipe on medium flame.
During monsoon season we find this amazing green leaf abundantly at low price. When ever we are left with rice we can make this recipe and feed our children.
Tips to make coriander rice recipe:
- Fresh or homegrown coriander leaves give good flavor to our recipe.
- To get nonsticky rice grains use basmati rice or add a generous quantity of ghee.
- If you wish you can add garam masala powder, to keep it less spicy I have only added coriander powder.

Ingredients
- Coriander leaves – 1 cup
- Green chilies – 4 No.
- Mint leaves – 2 tbsp.
- Garlic cloves – 7 No.
- Onions – 2 tbsp.
- Ghee – 3 tbsp.
- Cinnamon sticks – 3 No.
- Cloves – 5 No.
- Star Anise – 1 No.
- Green cardamoms – 3 No.
- Bay leaves – 2 No.
- Onions – ½ cup
- Green chilies – 2 No.
- Cashew – 3 tbsp.
- Turmeric powder – a pinch
- Carrot – 3 tbsp.
- Salt – 1 tbsp.
- Cooked rice – 1 bowl
- Coriander powder – 1 tbsp.
Instructions
- Put green chilies, coriander leaves, mint leaves, garlic cloves and onions in a mixer grinder.
- Grind to soft paste by adding little water. Keep aside.
- Heat ghee in a pan and add cloves, star anise, bay leaves, cinnamon sticks, green cardamoms, green chilies, onions and carrots.
- Saute for a while and add cashew, coriander paste, salt and sprinkle turmeric powder.
- Cook for 2 minutes at low flame and add pre-cooked rice and mix well.
- Once rice and coriander paste is mixed well sprinkle coriander powder (optional).

How to make coriander rice recipe:
1. In a mixer grinder add green chillies, mint leaves, coriander leaves and garlic cloves.
2. Add onions and grind for few rounds, add little water and make a soft paste.
3. Melt ghee and add cinnamon sticks, cloves and star anise.
4. Add green cardamoms, bay leaves, onion and slit green chillies.
5. Put cashew, a pinch of turmeric powder and coriander leaves paste. Cook for a minute.
6. Add finely sliced carrots and a spoon of salt. Cook for two minutes on low flame.
7. Put cooked rice and mix well till all rice grains are coated well.
8. Sprinkle coriander powder at the end and mix coriander rice recipe | Kothimeera Rice Recipe. Serve hot.
