Chicken Leg Piece Fry Recipe

Instead of using drumsticks, I have used the whole leg piece as a single piece that will fill your stomach. Most of us may think that deep-fried recipes are oily but our version has less oil with a soft and crisp layer.

When it comes to restaurants, they coat chicken and marinate for more than an hour and then deep fry in such a way that whole chicken dips in oil. Whereas in our version I have used less oil in such a way that half portion is dipped in oil so that we can flip and cook evenly.

Usually, I never use oil more than 2 times when it comes to deep-fried items I stick to single-use as it’s not healthy. As each piece weighs around 250-300 grams eating one piece will fill your stomach. If you are planning to serve this recipe as a starter or as a side dish this will fulfill your taste buds.  

Tips to make a perfect Chicken Wing Drumsticks Recipe:

  • Once the chicken is cleaned keep it in the skillet so that water gets drained.
  • To absorb the flavours of spices it needs to be coated well, making an incision over chicken will help to coat it well.
  • While coating spice mix tries to maintain a dry coat. While adding curd discard water.
  • Based on the quantity of chicken, adjust the egg beat. If needed add only half a portion of it.
  • While making a thick coat, and give a crispy texture we add rice flour, maida and cornflour.
  • If you feel the batter is loose, keep the vessel tilted so that water can be separated.
  • As we are deep frying large chunks of chicken, we need to marinate for 30 minutes to an hour.
  • To perfectly fry this recipe, deep fry over low to medium temperature.

Ingredients

  • Chicken leg joints – 4 No.
  • Ginger garlic paste – 1 tbsp.
  • Salt – ½ tbsp.
  • Red chilli powder – 1 tbsp.
  • Turmeric powder – ¼ tbsp.
  • Coriander powder – 1 tbsp.
  • Jeera/ cumin powder – ½ tbsp.
  • Black pepper powder – a pinch
  • Garam masala powder – 1 tbsp.
  • Curd – 1 tbsp.
  • Lemon juice – ½ piece
  • Egg – 1 No.
  • Maida –1 tbsp.
  • Corn flour – 2 tbsp.
  • Rice flour – 1 tbsp.

Instructions

  1. Choose the size of chicken leg joints we can use this process for the whole leg joint or just part of it.
  2. Clean and make an incision over leg pieces so that we can apply spice mix. Put in a bowl.
  3. Sprinkle turmeric powder, coriander powder, garam masala, red chilli powder, jeera powder, black pepper powder, salt, ginger-garlic paste, curd and lemon juice.
  4. Mix all spices. We can mix all spices separately and coat leg pieces. Coat and marinate for 30 minutes at room temperature.
  5. Heat oil in a pan and bring it to the optimum temperature to fry.
  6. To give a soft texture we coat chicken with egg mix. So break egg and whip to get soft froth.
  7. Add this egg mixture over chicken and sprinkle rice flour, maida and cornflour.
  8. Mix well to get a thick paste of coat and gently put leg pieces in oil to deep fry.
  9. Fry over low to medium temperature so that chicken cooks from inside.
  10. Flip to the other side and cook further till we get a golden texture.
  11. Drain excess oil and transfer to a serving plate and serve hot with onion slices.

How to make Chicken Wing Drumsticks Recipe:

1.  Clean chicken leg joints and slit and put them in a mixing bowl.

2.  Add ginger garlic paste, salt, red chilli powder and turmeric powder.

3.  Sprinkle coriander powder, jeera powder, black pepper powder and garam masala powder.

4.  Add curd and extract ½ piece lemon slice.

5.  Mix all ingredients and marinate for 30 minutes.

6.  Break one egg in a mixing bowl and whip. Open the lid and add to chicken pieces and sprinkle maida, cornflour and rice flour.

7.  Mix all flours till we get a thick coating.

8.  Put oil in a pan and heat till it reaches optimum temperature. Gently put leg pieces.

9.  Deep fry on low to medium flame till its colour changes to mild. Flip to the other side and deep fry till it turns golden brown colour. Remove from oil and drain excess oil.

Remove from oil and serve hot.
