Chicken Manchurian Recipe

Chicken is sliced into small pieces and then marinated with a blend of spices for 3-4 hours so that it turns soft and absorb the flavours of spices. It is then deep-fried in oil till they turn a crisp or mild golden colour. They are again coated with gravy to give additional flavour.

The egg makes chicken smoother from inside and crispy from outside, like egg white acts as a binding ingredient. Also, it enhances the flavour of this recipe. Whenever I go to the restaurant I like to order this recipe accompanied by noodles or egg fried rice.

Tips to make a perfect Chicken Manchurian Recipe:

  • Add soya sauce after marinating chicken or else there is a tendency that meat turns black.
  • Keep oil temperature at medium to high temperature that the chicken cooks well even when the whole chicken is put in oil.
  • Usually, when a large quantity of meat is put in oil, it tends to lose temperature.
  • Always put ¼ part oil to the level of the pan so that oil does not spill out of the pan as we have added baking powder.

Ingredients

  • Chicken – 300 gms.
  • Salt – 1 ½ tbsp.
  • All-purpose flour/ maida – 2 tbsp.
  • Corn flour – 2 tbsp.
  • Black pepper powder – 2 tbsp.
  • Ginger garlic paste – 1 tbsp.
  • Egg – 1 No.
  • Soya sauce – 1 ½ tbsp.
  • Oil – to deep fry
  • Garlic grate – 1 tbsp.
  • Ginger grate – 1 tbsp.
  • Green chillies – 1 tbsp. finely sliced
  • Onions – 2 tbsp. finely sliced
  • Vinegar – 1 tbsp.
  • Schezwan sauce – 1 tbsp.
  • White pepper – 1 tbsp.
  • Tasting salt/ Ajinomoto – ¼ tbsp. optional
  • Tomato sauce – 2 tbsp.
  • Water – ½ cup

Instructions

  1. Ask the butcher to cut the chicken into small pieces (1-2 inch size).
  2. Clean and put pieces into mixing bowl and add a little salt, maida, cornflour, black pepper powder, ginger garlic paste and egg.
  3. Mix all ingredients and marinate for 3-4 hours with the lid closed and in the refrigerator.
  4. Although we add soya sauce while making Manchurian gravy, add ½ tbsp. soya sauce after marination.
  5. In a pan add adequate oil to deep fry and bring it to optimum temperature.
  6. Add marinated chicken pieces in oil and deep fry till they turn mild golden brown.
  7. Usually, the chicken gets cooked fast as the size of the piece is small and marinated for 3-4 hours.
  8. Remove from oil and transfer to another plate, keep aside.
  9. In a pan, add little oil and add finely sliced ginger, garlic, green chilli pieces and onions.
  10. Saute for a second and add both black and white pepper powders, soya sauce (must), vinegar, tomato sauce, schezwan sauce, salt and Ajinomoto.
  11. Mix all ingredients and add little water to make gravy. Let it boil for few seconds.
  12. Add fried chicken pieces and mix well and cook on high flame so that gravy turns thick while the gravy is being coated to pieces.
  13. Garnish chicken manchurian recipe with coriander leaves and serve hot accompanied with noodles.

How to make Chicken Manchurian Recipe:

1.  Clean and cut the chicken into small pieces. Put it in a mixing bowl and sprinkle ½ tbsp. salt.

2.  Add all-purpose flour, cornflour, 1 tbsp. black pepper powder and ginger garlic paste.

Add maida, corn flour, black pepper powder and ginger garlic paste.

3.  Break one egg and mix well. Close the lid and marinate for 3-4 hours.

4.  Heat oil in a pan. Open the lid and add ½ tbsp. soya sauce after marinating and mix well.

5.  When oil temperature turns optimum, put all chicken pieces one by one so that they get cooked.

6.  Deep fry by stirring once a while and when they turn golden brown colour, remove from oil and drain excess oil. Transfer to another plate.

7.  Heat 2 tbsp. oil in a pan, add garlic grate, ginger grate and finely sliced green chillies.

Heat oil, add grated ginger, garlic and green chillies.

8.  Add finely sliced onions and sauté for a second; add 1 tbsp. soya sauce, vinegar and schezwan sauce.

9.  Put white pepper and 1 tbsp. black pepper powders, 1 tbsp. salt and tasting salt.

10.  Mix all spices and add tomato sauce and little water and make a thick sauce.

11. Add fried chicken pieces and toss for a while till sauce is coated well. Garnish Chicken Manchurian with coriander leaves and serve hot.
