Chicken Handi Recipe Dhaba Style

In villages, people love to cook over clay pots using dry wood and with cow dung cakes. Most of the times people do not add all spices mentioned in our recipe but the recipe tastes great. Many of them say that this recipe absorbs a portion of smoke and elevates its falvour.
People living in cities may not have clay pots so for them our recipe suits well. To give an approximate flavour of a clay pot, we have cooked chicken by adding a little oil and ginger garlic paste for about 10 minutes and then adding to the spice mix.
Handi Chicken Recipe can be served either with plain rice or with Indian bread as it’s cooked till it turns soft and has yummy gravy. Trust me when you make this recipe for your family on an earthen pot they will love it.
Tips to make the perfect Chicken Handi Recipe:
- If you are making this recipe in a clay pot, flavor of this recipe enhances the recipe, or else try to roast chicken with ginger garlic paste.
- Add a generous quantity of onions to give it a mild sweet texture.
- Adding curd will give a mild sour taste and adding fresh cream will improve the taste as well as the texture of the recipe.
- Try not to skip kasuri methi as it will not only give a nice aroma but enhance the flavor of the recipe.

Ingredients
- Chicken – 500 gms.
- Oil – 4 tbsp.
- Ginger garlic paste – 2 tbsp.
- Ghee – 1 tbsp.
- Jeera/ Cumin seeds – ½ tbsp.
- Onions – 1 bowl
- Tomatoes – 1 cup
- Turmeric powder – ½ tbsp.
- Red chilli powder – 1 tbsp.
- Salt – 1 ½ tbsp.
- Coriander powder – 1 tbsp.
- Jeera/ cumin powder – ¼ tbsp.
- Curd – 2 tbsp.
- Water – 1 cup
- Kasuri methi – 2 tbsp.
- Black pepper powder – ¼ tbsp.
- Garam masala powder – ½ tbsp.
- Fresh cream – 2 tbsp.
- Coriander leaves – 2 tbsp.
- Green chillies – 1 No.
Instructions
- In a pan put 2-3 tbsp. oil and fry ginger garlic paste. Add chicken and cook for 10 minutes and transfer to another bowl.
- Add a little more oil and a spoon of ghee in the same pan and fry cumin seeds and onions.
- Put tomatoes and cook for a while, once they turn soft, sprinkle red chilli powder, coriander powder, turmeric powder, jeera powder and salt.
- Mix all spices and add chicken pieces, close the lid and cook for 5 minutes till it absorbs flavours of spices.
- Add curd and cook for two more minutes with lid covered. Again add water and cook for 2 more minutes until chicken turns soft.
- Sprinkle garam masala powder, black pepper and kasuri methi. Mix.
- Add fresh cream and mix till the texture of the recipe changes.
- Garnish Chicken Handi recipe with coriander leaves and top with green chillies.

How to make Chicken Handi Recipe:
1. Heat 2-3 tbsp. oil in a pan and add ginger garlic paste. Fry for a second till it’s raw flavor is cooked, add chicken pieces and fry for 10 minutes.
2. Once they are semi-cooked, transfer to another bowl and keep aside.
3. Add 1 tbsp. oil in remaining oil in the pan and add 1 tbsp. ghee, add cumin seeds and onions.
4. Once onions are fried, add tomatoes and cook them till they turn soft.
5. Sprinkle turmeric powder, red chilli powder, salt and coriander powder. Mix well.
6. Add jeera powder and mix all spices. Add semi-cooked chicken pieces and cook for 5 minutes with lid covered.
7. Put whipped curd and cook further with lid for 2 minutes.
8. Add a cup of water and mix. Cook for 2 minutes with lid covered.
9. Sprinkle kasuri methi, black pepper powder and garam masala powder. Mix well.
10. Add fresh cream and mix. Sprinkle coriander leaves and green chillies.
11. Serve Chicken Handi recipe hot with steamed rice or with chapatti.
