Tips to make the perfect chana dal vada recipe:
- Soaking chana dal for an hour helps in grinding to paste, if you do not have time then soak them in hot water for 15 minutes.
- Based on your taste adjust spiciness and salt.
- Adding oil to the batter makes the batter soft and does not break even if you are making it in large quantities.
- To get a nutty and crispy texture do not grind to soft paste instead grind coarsely.
- Do not add water to the batter while making the paste, if the batter turns loose, add a little rice flour. But adding more rice flour may turn vada hard.
- To make crispy and perfectly cooked vada, make them flat so that they can be fried evenly.

Ingredients
- Chana dal – 1 cup
- Black pepper – ½ tbsp.
- Cinnamon sticks – 2 No.
- Cumin seeds – ½ tbsp.
- Green chillies – 2 No.
- Ginger – 1 inch size
- Garlic cloves – 8 No.
- Onions – ½ cup
- Curry leaves – 1 tbsp.
- Salt – ¼ tbsp.
- Coriander leaves – 2 tbsp.
- Rice flour – 1 ½ tbsp.
- Garam masala powder – ¼ tbsp.
- Oil to deep fry.
- Water – to soak
Instructions
- We can make a vada recipe with different pulses but chana dal has its unique flavour.
- First, we need to clean and soak dal for an hour so that they can be ground to paste easily.
- Make a paste of spice for which put cinnamon sticks, black peppercorns, ginger and garlic pieces, cumin seeds and green chillies in a mixer grinder.
- Grind to a coarse paste and add soaked chana dal by discarding water.
- Further grind to coarse paste and transfer to mixing bowl.
- Add finely sliced onions, salt, coriander leaves, curry leaves and mix well.
- Based on the thickness of the batter add rice flour, garam masala powder and little oil.
- Mix well so that spices are spread well. Take a small portion of batter and make a round shape and press to form a vada shape.
- Similarly, make all masala vada and keep aside.
- Meanwhile, heat oil in a pan to deep fry. Before putting vada put a small lump of batter to check the oil temperature.
- When oil is ready to deep fry, gently put all masala vada and deep fry on low to medium flame.
- Flip to the other side and deep fry till they turn a crisp and brown colour.
- Remove from oil and drain excess oil. Transfer to another plate and let them turn mild hot.
- Chana dal vada recipe gives crispy texture when cooled and is served best either with coconut chutney or with tomato ketchup.

How to make chana dal vada recipe:
1. Add chana dal in a bowl and pour little water and soak dal for an hour.
2. In a mixer grinder add black peppercorns, cinnamon sticks, cumin seeds and green chillies.
3. Add ginger and garlic cloves. Grind coarsely.
4. Put soaked chana dal in a mixer grinder and grind to paste.
5. Transfer the above paste to the mixing bowl and add onions, curry leaves and salt.
6. Put coriander leaves, rice flour and mix well. Sprinkle garam masala powder.
7. Add 2 tbsp. Oil and mix well. Take a small portion of batter and press to make a vada shape.
8. Heat oil and gently put Masala Vada and deep fry till they turn a golden brown colour.
9. Drain excess oil and transfer to a serving bowl. Serve Chana dal Vada Recipe hot with tomato ketchup.
