When I first tried to attempt this recipe I made it on a newly purchased microwave oven which came with built-in settings. I have to add all ingredients and set the mode and within 30 minutes this recipe got prepared.
Although the microwave version is very easy, every person does not have it so I decided to make the ordinary way of making this recipe.
To enhance the flavor of this recipe people sometimes add khoya or milkmaid. If you do not have them we can make this recipe simple yet tasty.
Tips to Make perfect Carrot Halwa Recipe:
- If we are cooking outside, this recipe needs to be cooked on low flame to get the perfect flavor.
- Always use a fresh carrot and whole fat milk.
- Nowadays we get a different variant of carrots, if you are using native carrots then cook at low flame.
- When this recipe is almost done, we need to stir constantly so that milk and ingredients are not burnt.
- While choosing carrots to go for tender and sweet which can be cooked easily and give good flavor.
- Full cream milk gives a good taste also a generous quantity of ghee enhances the flavor.
- Feel free to grate carrot using traditional handheld grater as we can grate to thin and fine grate which gives you soft texture when cooked.
- While cooking we used leftover ghee (after roasting dry fruits), if not add ghee and cook on low flame till the moisture in carrots is released.
- We have used a non-stick pan but when frying in steel there is a chance of getting burnt if you leave carrot halwa unattended.

Ingredients
- Carrot grate – 250 gms. 1 bowl
- Ghee – 3 tbsp.
- Almonds – 2 tbsp.
- Cashew – 2 tbsp.
- Raisins – 1 tbsp.
- Sugar – 3 tbsp.
- Milk – 1 bowl
- Cardamom powder – ¼ tbsp.
Instructions
- First let’s roast dry fruits, add little ghee in a pan and add cashew and almonds, roast for a while and add raisins.
- Usually, raisins fry faster so fry for a minute and when they bulge remove from ghee and transfer to another plate.
- On another hand, grate fresh and tender carrots and add them to the remaining ghee and cook on low flame till they turn soft.
- Add sugar and mix. If you feel it’s sticky and it may get burnt add little ghee and mix well.
- Pour milk and sprinkle cardamom powder. Cook 5-10 minutes till milk is absorbed by carrot and get a soft texture.
- At last, garnish Carrot Halwa | Gajar ka halwa with roasted dry fruits and serve hot or chilled.

- Soaking almonds for 5-6 hours makes it easy to slice into thin pieces.
- Grate the carrot into small and thin size so that they can be cooked easily.
- Do not put raisins along with almonds and cashew as they get fried in no time.
- Once raisins bulge into a round shape remove them from flame before they turn color.
- To get a rich flavor of khova, we can add it at the end of the recipe.
- If you do not have full cream milk then we can even add milkmaid.
- To experience the royal flavor of this recipe, add a generous quantity of ghee.
- Add sugar only when carrots turn soft or else it takes time to cook.
How to make Carrot Halwa Recipe:
1. Heat 2 tbsp. ghee in a pan and add crushed almonds, cashew and raisins.
2. Fry dry fruits for a while till raisins bulge and turn their color. Off the flame and transfer to another bowl.
3. Add carrot grate in remaining ghee and cook till carrot becomes soft on low to medium flame.
4. Put sugar and mix till it melts. Add a little more ghee and mix so that you have additional flavor.
5. Add milk and cardamom powder, mix well cook for 5 minutes till carrots absorb the milk and become thick.
6. Garnish carrot halwa recipe with fried dry fruits, mix and off the flame.
