Stuffed Capsicum Bonda is an irresistible Indian snack or appetizer, presented in the form of stuffed bell peppers with a spiced mixture, coated in gram flour batter infusing spices, and then fried till golden brown. It was a kind of South Indian and North Indian food together, which basically created a fusion of sorts by taking the snack-bonda concept and flavoring the filling to be used but this time had a bell pepper as an ingredient for its stuffing.

This is one such fritter, very commonly enjoyed in India, often as a snack or over tea. Bajjis are street food and can be seen around many parts of the country, but they are also prepared within the house on occasion, sometimes for special celebrations or even as a treat.

Serving: Bonda can be served hot with numerous chutneys or sauces for dipping. We can use pudina chutney, tamarind chutney, or tomato ketchup. It can be served as an appetizer or snack and even side dish.

How to make capsicum Bajji Recipe:

1.  Make a slight incision at the bottom of the capsicum so that air can be released while deep frying.

Tips to make perfect Capsicum Bajji Recipe:

Preparing the Capsicums:

Use capsicums with relatively wide opening at the top so that they can be stuffed easily.

Cut a lid from the top of the capsicum. Remove the seeds and membranes using a spoon.

Parboil or microwave the capsicum halves lightly for about a few minutes to make it a bit soft and pliable. This will save you time during cooking.

Stuffing :

Prepare filling by boiling mashed potatoes, spices, vegetables, and herbs. Season to taste. (another version)

Ensure that the filling is leveled and nicely flavored.

Stuffing the Capsicums:

Spoon the prepared potato mixture into the hollow capsicum halves and press lightly ensuring the filling spreads out evenly and tight.

Batter Consistency:

Now mix them well with chickpea flour, rice flour, and water to get the batter. The batter must be smooth and thick enough so that the stuff-ered capsicum is properly coated with it.

Frying:

Heat oil in a deep pan and keep it at the temperature of medium high for frying the stuffed capsicum.

Dip every one of the stuffed capsicums in the batter and coat it up completely.

Fry covered capsicum very gently in the hot oil, till golden brown and crispy on all sides. Do not overcrowd the pan.

Removing Excess Oil:

When fried, with the slotted spoon take bondas out from the oil and put it on a plate lined with paper towels for excess oil to drip out.

Serving:

Serve hot along with mint chutney, tamarind chutney, or even ketchup.

You can even go for a paneer or cheese stuffing for added flavor.

Ingredients

  • Capsicum – 500 gms.
  • Besan powder – 2 bowls
  • Rice flour – 1 tbsp.
  • Thymol seeds – 1 tbsp.
  • Salt – 1 ½ tbsp.
  • Turmeric powder – ¼ tbsp.
  • Red chili powder – ¼ tbsp.
  • Eating soda – a pinch
  • Onion slices – 1 cup
  • Carrot grate – 1 cup
  • Coriander leaves 3 tbsp.
  • Jeera powder – ½ tbsp.
  • Chaat masala – ½ tbsp.
  • Garam masala – ½ tbsp.
  • Corn flakes – required for stuffing
  • Kara Boondi – required for stuffing
  • Fried peanuts – 2-3 tbsp.

Instructions

  1. Make a small incision at the bottom of the capsicum to allow air to escape during deep fried.
  2. Combine two bowls of besan flour and rice flour in a mixing basin. Crush the thymol seeds with your hands and mix them into the flour.
  3. Stir in 1 tablespoon salt (to taste), red chilli powder, turmeric powder, and a pinch of baking soda.
  4. Combine all spices and add enough water to produce a thick batter.
  5. Heat the oil in a skillet, and on the opposite side, dip the capsicum in the batter and coat thoroughly. Place the capsicums in the oil one at a time.
  6. Combine sliced onions, grated carrot, coriander leaves, and 12 teaspoon salt in a mixing basin.
  7. Stir in the garam masala, chat masala, and garam masala powders.
  8. Cut the capsicum bajji in half and place them on a serving platter. Fill them with the aforementioned spice mixture.
  9. Top with crushed corn flakes, kara boondi and fried peanuts.
  10. Garnish the capsicum bajji with sliced onions and coriander leaves. Serve immediately.
