Easy Cabbage Fry Recipe Andhra Style | Cabbage Vepudu
Cabbage Fry Recipe or Cabbage Vepudu is one of the Andhra-style recipes that can be served with plain rice or chapati. This is one of the healthy nutrient-packed recipes which is light on the stomach.
In another variation of this recipe, people like to make by adding soaked moong dal, sometimes people like to add grated coconut to enhance flavour.
This version of the recipe is made without added ingredients. Cabbage is a veggie that is used while making noodles, sandwiches, soups and even cabbage vada and deep-fried snacks.
Usually, we don’t add water while preparing this recipe as there is a good quantity of water in the veggies. We try to remove water by stir-frying.
Tips to Make Perfect Cabbage Vepudu or Cabbage Fry Recipe:
- Slice cabbage into long and thin slices so that we can cook fast and attain non-sticky.
- Never put a lid to cook for more than a minute to get crispy output.
- Adding salt will release moisture so stir moderately to evaporate water.
- We can use this recipe as a stuffing ingredient for a sandwich.
Cabbage Fry Recipe, Cabbage Vepudu, How to make Cabbage Fry Recipe
Cabbage Fry Recipe or Cabbage Vepudu is one of the Andhra style recipes which can be served with plain rice or with chapatti.
Ingredients
- 1 large bowl Cabbage
- 4 tbsp. Oil
- ½ tbsp. Mustard seeds
- ½ tbsp. Cumin seeds
- 1 tbsp. Moong dal
- 15-18 No. Garlic cloves
- 4 No. Green chillies
- 1 cup Onions
- 3 strands Curry leaves
- 1 cup Tomatoes
- ½ tbsp. Turmeric powder
- 1 tbsp. Salt
- 1 tbsp. Red chilli powder
- ¾ tbsp. Coriander powder
- 1 tbsp. Coriander leaves
Instructions
- In a pan add oil and add mustard seeds, moong dal and cumin seeds and stir fry.
- Add onions, green chillies, garlic cloves and curry leaves.
- Once onions turn soft, add tomatoes and cook further.
- On another hand slice cabbage into thin pieces so that they can be cooked easily.
- Cover the pan with lid covered for a minute so that cabbage becomes soft.
- Add little salt and turmeric powder, mix well.
- Cook for 3 minutes on low flame by stirring occasionally. After adding salt, cabbage tends to release water.
- When it turns soft, sprinkle coriander powder and red chilli powder, mix well.
- Serve Cabbage Fry or cabbage vepudu recipe hot with plain rice or chapatti.

How to make Cabbage Fry Recipe or Cabbage Vepudu:
- Heat oil in a pan, once it reaches optimum heat add mustard seeds, cumin seeds and moong dal. Stir fry for a while.
- Add garlic cloves, green chillies, onions and curry leaves. Sauté till onions turn soft.
- Cut tomatoes into fine pieces and add them. Sauté till they turn soft and juicy.
- Slice cabbage into thin wafers as shown in the picture and add them.
- Cover the pan with a lid and let it cook for a minute.
Note: If you need a crispy texture then do not cook for more than a minute with the lid covered. Overcooking may make this recipe soft and sticky.
- Sprinkle turmeric powder and salt. Mix well and cook for 2-3 minutes.
Note: After adding salt, cabbage starts releasing moisture so never put a lid.
Tip: We can even add salt at the end along with coriander powder.
- Add red chilli powder and coriander powder and mix well.
- At last add coriander leaves and off the heat.
- Serve Cabbage Vepudu or Cabbage Fry Recipe hot with plain rice.
