Broad Bean Seeds Masala

To make this recipe we can either purchase de-seeded broad beans or bulgy seeded broad beans. Bigger the seed, the tastier the recipe. Although it takes time to cook, it tastes great when accompanied with steamed rice.

Usually, the skin of the bean has nutritional values. If you feel it’s dark in colour and doesn’t like it, remove the skin once boiled, beans come out by squeezing them. We have not removed the skin so we have added them directly and boiled them for 15 minutes in the curry.

Tips to make perfect broad bean seeds masala:

  • While purchasing fresh broad bean seeds from the market check for separate seeds.
  • In local markets, once broad beans lose their tenderness, seeds come out so they remove the seeds and sell at a low price.
  • We can boil beans and add them to masala curry or if you feel they are tender we can directly add them to curry and cook for 15 minutes.

Ingredients

  • Chikkudu Ginjalu/ Broad bean seeds – 2 cups.
  • Oil – 3 tbsp.
  • Cinnamon sticks – 3 No.
  • Cloves – 6 No.
  • Green cardamoms – 3 No.
  • Jeera/ cumin seeds – 1 tbsp.
  • Onions – 1 cup
  • Green chillies – 2 No.
  • Ginger garlic paste – 1 tbsp.
  • Tomatoes – 1 cup
  • Turmeric powder – ¼ tbsp.
  • Salt – 1 tbsp.
  • Red chilli powder – 1 tbsp.
  • Coriander leaves – 1 tbsp.
  • Water – 1 glass
  • Coriander powder – 1 tbsp.

Instructions

  1. Put little oil in a pan and fry cinnamon sticks, green cardamoms, cumin seeds, cloves and onions.
  2. Add green chillies, ginger-garlic paste and sauté for a while till its raw flavour is cooked.
  3. Put tomatoes and broad beans. Sprinkle turmeric powder, red chilli powder and salt.
  4. Mix all ingredients and close the lid and cook for a minute till tomatoes turn soft.
  5. Add a glass full of water and cook for 15 minutes till seeds are cooked and we get a thick gravy.
  6. Sprinkle coriander powder and garnish with coriander leaves.
  7. Broad Bean Seeds Masala tastes great with steamed rice or with chapati. Serve hot.
