Brinjal Masala, How to Make Brinjal Masala Recipe, Baingan Masala Curry
Brinjal Masala is one of the Andhra-style classic recipes which is easy to prepare. This recipe is stuffed with spicy garam masala mixture and cooked. One can feel the aroma of baingan masala which spreads your entire kitchen.
As this is one of the spicy recipes, this is usually served with chapati, butter naan or jeera rice. Usually, brinjal is stuffed with a blend of spices made with sesame, groundnuts, coriander seeds and onions. In some cases, you may use either sesame seeds or groundnut seeds to make gravy.
While making gravy roasting plays an important role, one should roast them on low flame until you get a slight aroma out of it. One can experience the aroma of this special blend even in the next room. Also while slicing brinjal’s we should make a cut not tear apart so that it will hold masala paste.
While cooking baingan masala, it’s a better idea to take flat pan rather than oval shape bowl because we can cook evenly and stir gently. You may also like brinjal Chutney and Brinjal gothsu recipe.
Brinjal Masala, How to Make Brinjal Masala Recipe, Baingan Masala Curry

Ingredients
- 250 gms. Brinjal
- 3 tbsp. Salt
- 10 No. Cinnamon Sticks 1 inch sticks
- 10 No. Cloves
- ½ tbsp. Saijeera
- 4 No. Green
- ½ bowl Groundnut
- ½ bowl Sesame seeds
- 1 bowl Onions
- 20 No. Garlic cloves
- 3 Inch piece Ginger
- 1 bowl Tomatoes
- ½ cup Oil
- ½ tbsp. Mustard seeds
- ½ tbsp. Cumin seeds
- ½ tbsp. Turmeric powder
- 2 tbsp. Red chilli powder
- 1 tbsp. Coriander seed powder
- 2 tbsp. Coriander leaves
Instructions
- Cut brinjals into two half’s and slit again so that it spreads into four ways.
- Put them in salted water so that they don’t turn dark.
- In a pan roast green cardamoms, cloves, saijeera and cinnamon sticks, sesame seeds and peanuts, let them cool before transferring to a blender.
- In a mixer add ginger, garlic cloves, onions and tomatoes to make a smooth paste.
- Remove this paste and add roasted spices and make powder.
- Add little water to make a soft paste.
- Heat oil in a pan and add brinjal pieces, roast till they are cooked.
- In the leftover oil add mustard seeds, moong dal, cumin seeds and curry leaves.
- Add onion and tomato paste, spice paste and sauté for a while.
- Sprinkle salt and turmeric powder, mix well and cook for 2 minutes with lid covered.
- Add blender cleaned water and red chilli powder and cook further with lid covered for 10 minutes.
- When Brinjal Masala Curry is almost done, sprinkle coriander powder and mix well.
- Garnish coriander leaves over Baingan Masala Recipe and serve hot.

How to Make Brinjal Masala Curry or Baingan Masala Recipe:
- Add 1 tbsp. salt in water and keep aside.
- Slice brinjals into four halves and remove the edge of the stem stick and put them in salt water.
Tip: Adding brinjal in saltwater locks its color and helps it not turning them black.
- Roast cinnamon sticks, cloves, saijeera and green cardamoms on a pan.
- Continue adding peanuts and sesame seeds, keep aside and let them cool.
- In a blender, add onions, garlic cloves and ginger pieces and make a smooth paste.
- In the same blender add tomatoes and make a soft paste.
- Similarly, add roasted ingredients in a blender and make a soft paste, if needed add little water.
- Add ½ cup oil in a pan and fry brinjal pieces for 10 minutes, once they are cooked transfer them to another bowl.
- In the same pan add mustard seeds, cumin seeds, moong dal and curry leaves. Saute for a while.
- Add onion paste and tomato puree sauté for a while.
- Sprinkle turmeric powder and 2 tbsp. salt and sauté for a while.
- Add the groundnut spice paste and mix well, cook this paste with the lid covered for 2 minutes.
Tip: Don’t throw away the water used to clean the ground nut spice blender of brinjal masala curry.
- Sprinkle red chili powder and blender-cleaned water.
- Add brinjal pieces and cook for 10 minutes with the lid covered.
- Sprinkle coriander seed powder and mix well.
- Garnish Baingan Masala Recipe with coriander leaves.
