To remove stickiness and to enhance flavour bhindi is first sliced into two halves and then semi-cooked and then cooked by adding onions, tomato puree and then a blend of spices.

Tips to make perfect Bhindi Masala Curry:
- Choose tender ladies finger by checking the tip of the veggie. When you break the tip, if it breaks then they are tender or else they are fibrous.
- We can directly add tomatoes to our recipe but to save time, I made tomato puree. If you want we can even make onion puree.
- Based on the gravy you would like to have additional water.
- Cooking bhendi separately with little oil will give extra flavour by saving our time.
- As we are adding curd, adjust the number of tomatoes we add or else this recipe may turn tangy.
- To remove the stickiness of bhendi we need to semi cook with little oil. Usually, we cook veggies by covering the lid but in our recipe, if we cover the lid stickiness lower but instead increases.

Bhindi Masala Curry | Bendakaya Masala is one of the aromatic and delicious recipes made in restaurant style.
Ingredients
- Bhindi/ ladies finger/ okra – 1 large bowl 250 gms.
- Oil – 5 tbsp.
- Cumin seeds – ½ tbsp.
- Onions – 1 cup
- Curry leaves – 2 tbsp.
- Ginger garlic paste – 1 tbsp.
- Tomato puree – 1 cup
- Turmeric powder – ¼ tbsp.
- Salt – ½ tbsp.
- Red chilli powder – 1 ¼ tbsp.
- Coriander powder – ½ tbsp.
- Garam masala powder – ½ tbsp.
- Curd – 1 cup
- Water – 200 ml.
Instructions
- Clean and slice ladies finger into 1 inch pieces.
- Add little oil in a pan and cook on low flame till they turn soft.
- Transfer to the same bowl and keep aside.
- Add a little more oil in a pan and cumin seeds, curry leaves, onions and ginger garlic paste.
- Saute for a while and add tomato puree, red chilli powder, coriander powder, turmeric powder, garam masala powder and salt.
- Mix well and cook for a while with lid covered till oil oozes out of tomato puree.
- Add curd and 200ml water (based on the gravy you need) and bring it to boil.
- Put semi-cooked bhindi and cook for a while till we get a thick gravy.
Serve Bhindi Masala Recipe hot with steam rice or with chapati.

How to make Bhindi Masala Recipe:
1. Heat 3 tbsp. oil in a pan and put ladies finger pieces in it and fry till they turn soft. Transfer to the same bowl and keep aside.
2. Add 2 tbsp. oil more in the same pan and add cumin seeds, onions and curry leaves.
3. Put ginger garlic paste and sauté for a while.
4. Add tomato puree, turmeric powder, salt and red chilli powder.
5. Sprinkle coriander powder and garam masala powder. Close the lid and cook for a minute.
6. Add curd and little water. Bring it to boil with lid covered.
7. Put bendi and cook for 5 minutes with lid covered. Once the gravy thickens serve Bhindi Masala Recipe hot.
