This recipe comes from Gujarat cuisine, not only this recipe we can find most of the besan-made snacks from this region and most of them are popular across India. We find this recipe in almost all savory and sweet shops.

Tips to make the perfect Gathiya recipe:
- Sieving gram flour will not only remove foreign particles but also make it lump-free.
- For every cup of besan flour, we need to put half of the oil and water. i.e. 1: ½: ½ ratio to make the perfect batter.
- If you feel the batter is hard, we can add 1-2 tbsp. of water. Adding more water will absorb more oil.
- Adding soda will make it a soft and mild crisp texture.
- To check the perfect temperature of the oil, put a small lump of batter, if it floats then the oil is ready.
- Star shape murukku mold will perfectly suit to make Gathiya recipe.
- Greasing oil will make the batter nonsticky and give a perfect star shape.
- While frying we need to maintain a low flame, overheating will make it burn from the outside and uncooked inside.
- To have a crispy texture, we can add rice flour in small quantities (1-2 tbsp.)
- If you prefer eating spicy then it’s better to sprinkle spice powder.

Ingredients
- Besan/ gram flour – 1 cup
- Oil – ½ cup
- Water – ½ cup
- Salt – 1 tbsp.
- Soda – ¼ tbsp.
- Black pepper powder – ¼ tbsp.
- Ajawan/vamu/carrom seeds – ¼ tbsp.
- Oil – to deep fry
Instructions
- To get a soft texture it’s a good idea to remove foreign particles so sieve gram flour before use.
- Add oil and water in 1:1 portions i.e., ½ cup each in a mixing bowl.
- Sprinkle little baking soda and salt. Whisk for a while till it turns into a white mixture.
- On the other side, add carom seeds and black pepper powder to besan flour and mix.
- Add whipped oil mixture to the flour and knead well till they turn soft and non-sticky.
- Before preparing the mold, heat the oil in a pan.
- We can use either round or star-shaped murukku mold. I have used 3-star holed mold.
- Grease the whole murukku presser along with the mold plate and stuff a portion of dough into it.
- Once the oil reaches optimum temperature, press the dough directly in the oil forming a round shape without overlapping each ring.
- Deep fry and flip to the other side after a minute and deep fry.
- Remove from oil once they turn color to mild and transfer over kitchen paper to remove traces of excess oil.
- Once cooled, store bhavnagari tikha gathiya recipe in an airtight container.

How to make bhavnagari tikha gathiya recipe:
1. Sieve gram flour to remove any lumps or foreign particles, and keep it aside.
2. In a mixing bowl add ½ cup oil and ½ cup water in equal portions.
3. Add a little salt and eating soda and whisk well till the mixture turns white.
4. Sprinkle black pepper powder and carrom seeds over gram flour and mix well.
5. Pour the oil mixture into besan flour and knead well till we get a soft texture.
6. Heat oil in a pan and bring it to optimum temperature.
7. We make use of 3-star holed mold. Grease the whole murukku presser with oil.
8. Wet your hand with little water and put a small portion of batter in the mold and directly press in hot oil.
9. Deep fry till they turn mild color, over frying may burn. Remove from oil and keep aside.
10. Repeat the process and make the perfect Gathiya recipe at home.
