Tips to make perfect Beetroot Masala Curry:
- If you do not have fresh coconut we can substitute it with dry coconut.
- Usually, beetroot takes time to cook, if you want to save time we can cook separately and add to seasoning along with stock to save time.
- Based on the Masala gravy you like to have we need to adjust the water.
- When you add coriander powder and garam masala powder gravy thickens.
- If you feel there is more water in curry, open the lid and cook on a high flame.
- Beetroots are sometimes hard to cut, if you want we can microwave for a minute to make it soft.
- To get a creamy texture we can even add cashew or poppy seeds but to keep it light I have used only coconut paste.

Ingredients
- Beetroots – 250 gms.
- Fresh Coconut – 1 bowl
- Green chillies – 5 No.
- Garlic cloves – 9 No.
- Onions – 1 bowl
- Oil – 3 tbsp.
- Cumin seeds – ½ tbsp.
- Turmeric powder – ½ tbsp.
- Salt – 1 tbsp.
- Red chilli powder – ½ tbsp.
- Coriander powder – ½ tbsp.
- Water – 1 ½ glass
- Garam masala powder – ¼ tbsp.
- Coriander leaves – 2 tbsp.
Instructions
- As our recipe states, it’s masala flavoured beetroot recipe lets first prepare a spice mix.
- In a mixer grinder add fresh coconut pieces, garlic and green chillies.
- Grind to a soft paste and keep aside. In the same grinder put onions and make onion paste.
- In a pan heat oil and add cumin seeds, onion paste and coconut paste. Saute for a while.
- Sprinkle red chilli powder, turmeric powder, coriander powder, salt and little water.
- Mix all ingredients and add beetroot slices when masala mix starts boiling.
- Cook for 15-20 minutes with lid covered till beetroots are cooked.
- Sprinkle garam masala powder and mix. Cook for a minute and garnish with coriander leaves.
- Beetroot Masala Curry tastes great when accompanied with chapati or steamed rice.

How to make Beetroot Masala Curry:
1. Add fresh coconut, green chillies, garlic cloves in a mixer grinder and grind to make a soft paste.
2. Put onions in the same mixer and make a soft paste. Keep aside.
3. Heat oil in a pan and put cumin seeds and onion paste. Saute for a while.
4. When onion paste turns its colour add coconut paste and mix.
5. Add turmeric powder, salt, red chilli powder and coriander powder.
6. Mix all ingredients and add adequate water and bring it to boil.
7. Put sliced beetroots and cook for 20 minutes with lid covered.
8. Add garam masala powder and garnish Beetroot Masala Curry with coriander leaves.
