Badusha Recipe or Balushahi Recipe is one of the favourite and simple sweet recipes of both North and South India.

Balushahi Recipe is crisp from the outside and soft on the inside. As this recipe is soaked in sugar syrup outer shell turns crisp and sugar crystal coated but the inner part turns soft.

This recipe is one of the traditional recipes of both North India and South India and is specially prepared during the festive season of Diwali.

We can even make this recipe taste rich when deep fried in pure ghee on low flame and then dipped in thick sugar syrup where we get a thick coat of sugar over the layer and a crisp and flaky texture from the inside.

Have you ever wondered why this sweet is cheaper than any other in the sweet shop? It has low ingredients and is easy to make and all ingredients except ghee cost less.

If we do not like to have a flaky texture and want a soft texture then we need to adjust the concentration of sugar syrup. When syrup is very thin then Badusha Recipe tends to absorb and turn soft. Sometimes we need to soak for overnight to get a soft texture.

I had a different experience with a foreigner in India, he thought this recipe looked similar to their doughnut but he was thrilled to eat this recipe. His words “It’s sweet, soft and has slight flaky texture from inside”.  

TIPS to make perfect Balushahi or Badusha Recipe:

  • We can substitute ghee with butter or with normal oil. Ghee gives a good flavour to our recipe.
  • Adding baking soda and normal eating soda will help in absorbing sugar syrup and makes it soft.
  • 1 tbsp. lemon extract will stop sugar syrup from getting crystallized.
  • Knead flour till it turns soft as soft dough gives good flavour when deep-fried.
  • We need to maintain a medium flame so that Balushahi cooks slowly and attains golden colour.
  • If you want a juicy texture maintain a mild thin syrup than what we have prescribed in our recipe.

Ingredients

  • Maida/ All purpose flour – 1 bowl
  • Baking Powder – ¼ tbsp.
  • Eating soda – ¼ tbsp.
  • Salt – a pinch for taste
  • Ghee – 2 tbsp.
  • Water – required to knead approx. 250 ml
  • Lemon juice – 1 tbsp.
  • Cardamom powder – ¼ tbsp.

Instructions

  1. In a mixing bowl add all-purpose flour, baking powder, a very little salt and eating soda.
  2. On other hand, melt ghee in a tadka bowl. Add ghee directly in flour and mix all ingredients with the help of a spoon as ghee is hot.
  3. Add little by little water and knead the flour to get a very soft dough.
  4. To get crunchy layer and soft from inside we need to knead dough to get soft and pliable.
  5. Place a lid on the bowl and keep aside so that flour absorbs moisture and becomes soft.
  6. Make sugar syrup by adding 1 bowl sugar and an equal portion of water.
  7. Boil syrup till you get thin and sticky syrup which can be observed by checking with two fingers.
  8. Once you get required concentration, off the flame before it turns thick syrup.
  9. Add little cardamom powder to get the essence and little lemon extract so that sugar syrup does not get crystallised.
  10. Knead the dough and make equal portions of dough to make a round shape.
  11. Take one portion and make round ball and press at the centre to form well kind of hole.
  12. Similarly, make remaining badusha and keep aside.
  13. In a pan add required oil to deep fry by keeping the medium flame. If the oil temperature is high they do not cook from inside, so they need to be cooked slowly.
  14. Once deep-fried transfer them into the sugar syrup and keep aside.
  15. Balushahi or Badusha Recipe takes 30 minutes to an hour to absorb the sugar syrup.

How to make Balushahi or Badusha Recipe:

1.  Add 1 bowl of maida in a mixing bowl and add a pinch of salt to taste, baking powder and eating soda.

2.  Heat ghee in a tadka bowl and add to the flour while it’s hot and mix with a spoon. Add a little water and knead the dough.

3.  If needed add a little more water and make a soft and pliable dough and keep it aside with a lid covered till we make sugar syrup.

4.  In a pan, add 1 bowl of sugar and add 200 ml. water and boil till we get thin sticky sugar syrup. Off the flame.

5.  Add 1 tbsp. lemon juice and ¼ tbsp. cardamom powder and mix well.

6.  Knead the dough again and make small portions of equal-sized balls to make  Badusha Recipe.

7.  Take a small portion of dough and make round balls and press in the center.

9. Heat oil in a pan and maintaining medium flame, deep fry these balls till they turn a golden brown colour.

10.  Put Balushahi Recipe directly in sugar syrup and let them dip in syrup for 30 minutes.
